Grandma's Fresh Apple Cake

One of my most favorite recipes for a quick and delicious dessert. I chop my apples in a food processor and add lots of spices! This cake/bread is moist, flavorful and laden with apples. Delicious! Enjoy!

Easy Pumpkin Muffins

Made these with a spice cake mix and 1/2 of a 29 oz. can of pumpkin while making pumpkin bread as well. I did add a little pumpkin pie spice b/c we like pumpkin with lots of flavor! My batter was dense making it super easy to scoop with an ice cream scoop but they did not turn out dry and dense after baking. I cooked mine for 22 minutes and they came out extremely moist. Though they tested done I had to take a second look b/c they were almost too moist when we were eating them. Sure enough they were cooked through. Yummy little muffins. Love the ease of the recipe! Enjoy!

Candied Kielbasa

I have a similar recipe that also adds a 1lb bag of sauerkraut. My recipe calls for the mixture to be cooked/sauteed in a pan for 20 minutes rather than in a crock pot. My family liked it fine but it definitely was VERY sweet. Reduce the brown sugar some. Enjoy!

Spiced Quinoa

A great side dish. Nice to try something different. I toasted the nuts then quickly processed them to more evenly distribute through the grains. Used vegetable broth in place of chicken. Delicious!

JELL-O® Pastel Cookies

Definitely have the flavor of the gelatin used. I used apricot and they had a nice fruity tang but my kids didn't like them. I rolled them in a bit of remaining gelatin and green sugar. They are pretty for a spring party. Would be interested in trying different flavors.

Pumpkin Crunch Parfaits

Made this for a holiday party. Doubled the recipe and layered it all into a big crystal bowl. Did add more spices than called for in the recipe. Delicious! Everyone really enjoyed this. It was gone in an instant.

Pork-n-Beans Cake

Three stars because its definitely unique! I thought, with the addition of much more spice, it was a tasty and moist quick bread. Had left over baked beans from dinner and decided to make a loaf of this bean bread. It may be psychological but I felt like it had a grainy texture, reminiscent of added fiber. A quick recipe worth trying.

Lemon Chicken Soup II

Hearty and Nutritious, Easy and Uses ingredients readily available. A nice soup with the addition of lemon. Adds just the right bit of something interesting/new. I added too much pepper, avoid doing that. But otherwise, delicious. Did add two stalks of celery and a can of a cannellini beans for extra protein.

Chocolate Chip Breakfast Cookies

A nice sized cookie! Dense. We did like them. They were sweet and crunchy. I love oatmeal so these to me were great. Next time I would add ground flax meal and finely chopped pecans.

Date Nut Bread

We loved this delicious bread! It was a little sweet for my liking so next time I will add a bit less sugar. I added King Arthur cinnamon bits a long with cake spice, nutmeg and cinnamon. I also used Smart Balance and Egg Beaters to cut a bit on fat grams. OH! I also added chopped papitas instead of nuts for the added crunch. A simple and tasty recipe.

Cake Mix Cookies VIII

made mine as a traditional chocolate chip cookie with a white cake mix and semi sweet chocolate chips. I have to say they were definitely fast and easy though mine still tasted a bit like cake mix which disappointed me some. Used the store brand boxed mix so that could be the issue. Would love to try these with chocolate cake mix next time and white chocolate chips. Made mine with smart balance and egg beaters so they were slightly less fat grams.

Fudge Puddles

Mine definitely aren't as pretty as some in the pictures but they sure tasted great! Made these with my sons to bring to a friends house along with some red velvet woopie pies. Made 36 cookies and had just the right amount of chocolate fudge to fill each of them. Thanks for a great recipe!

Mom's Zucchini Bread

Easy and delicious. I love a lot of spice and with 3 teaspoons of cinnamon you definitely can taste it! I ground the pecans and also added a few tablespoons of flax meal to my dry ingredients. I do find a slight after taste from either the baking soda or powder. Still, all and all, a yummy zucchini bread.

Cold Tuna Macaroni Salad

A good base for a tasty pasta salad. Needed to add more seasoning as well as increase the salad dressing in order to make it flavorful enough for my tastes. Next time I'd like to add a second can of tuna to make it more hearty. Quick and easy recipe.

Ginger Glazed Mahi Mahi

Marinated the fish for a slight bit longer than 20 minutes. Baked it in the oven and it turned out great. Be sure not to over cook it. I think 10 minutes would have been plenty. Sweet and salty...Yum! Served it with cold sesame noodles.

Cranberry Wheat Bread

Made this loaf tonight for tomorrow's breakfast. Easy to throw together in the bread machine. Added some chopped almonds and doubled the spices. Didn't have cloves so I added cake spice instead along with the cinnamon and nutmeg. Baked up nice and high. Oh, I also added some flax seed meal and hi maize flour to make it a bit healthier.
