Feta Chicken Salad

awesome chicken salad recipe! such a nice change from the ordinary. my husband grimaced when i told him we were having these pita sandwiches for dinner but quickly changed his opinion as soon as he tasted it ;) the feta and dill give it such a nice flavor and the veggies give it the necessary texture. definitely a 5 star recipe.

Cilantro Chicken and Rice

excellent recipe and very easy to make. i found it to be very flavorful and healthy too. i used brown rice to make it, didn't bother dredging the chicken and only added one can of pinto beans as i halved the recipe. omitted the cayenne and added a dash of cumin. no unnecessary fats and plenty of protein and good carbs. my kids and hubby loved it.

Cinnamon Plum Jam

this tastes AMAZING!! however, i couldn't give it 5 stars because it didn't set up properly with the given instructions. should've followed the tried and true instructions on the pectin...next time :) a quick tip for those who left their peels on, dunking the plums in boiling water for a few seconds followed by an ice bath will make those skins slide right off...the more ripe they are, the less time it takes in the boiling water.

Gourmet White Pizza

such a nice change from regular pizza! i used a classico sun-dried tomato alfredo sauce and eliminated the pesto, added a little mozzarella with the feta and threw on some kalamata olives (b/c i had them and they needed using up). everyone loved it and ate the leftovers for lunch the next day.

Anna's Amazing Easy Pleasy Meatballs over Buttered Noodles

love this! it doesn't need changing! frozen meatballs are a wonderful invention for a quick meal that tastes like you spent ages on it. the gravy for this is perfect, i wouldn't have thought to combine these two soups but it's fabulous. my kids and hubby loved it and asked for the leftovers the following night ;) this will get put into regular rotation...

Margarita Fruit Salad

oh wow! this was so good! i don't know if it makes a difference to have the tequila in the mix or not since i don't taste a strong tequila flavor (i used the premade margarita) but i thought it was excellent. i used everything the recipe suggested except i swapped the honeydew for watermelon and my marmalade was a homemade peach/ginger marmalade but it turned out really well regardless. definitely will be making for the next potluck :)

Baked Potato Soup

excellent recipe! very quick and tasty. i followed it just as it was written except i had to use about 1/2 cup of milk with my half/half simply because i didn't have enough. i also threw a handful of grated cheese into the soup right before serving as well as a topping. everyone loved it and i'll definitely be making this again.

Spicy Peach Chutney

fabulous chutney recipe! i had peaches from my tree to use up and this was perfect! i made it just as it was written, except i used golden raisins, and crystallized ginger (couldn't find any preserved). i simmered it for a little longer than 1 1/2 hours only because my canning jars needed a little longer to sterilize ;) turned out wonderfully though, my mum loves chutney (british and used to good indian food) and she raved and asked for another jar. makes a great gift. thanks for the recipe!

Peach Muffins

kind of surprised at all the 5 star reviews this has gotten. it's not a bad recipe but just not worth 5 stars in my opinion. i made up the batter just as it's written, then realized the reviewers are right, it's too thick. added 1/2 C milk and it was still pretty thick. added an extra cup of chopped peaches and gave it a go. first batch overcooked at 20 min. second batch was fine at 15 min. but the muffin was still pretty dry. not bad, but could have been better.

Easy Haupia

i thought this was pretty close to the haupia you get in hawaii (i lived there for a few years so i wouldn't claim "local" knowledge but i've had it plenty before). i did have trouble getting it to set up but it's possible the pan i used made it too thick. didn't stop me or the kids from scooping it out with spoons and killing it in record time. next time i'll try a bigger pan and see if that helps. great way to use up that can of coconut milk when a recipe calls for a measly 1/2 cup :)

Pasta With Peanut Sauce

this recipe as it's written is a good start, otherwise i would have given it 5 stars. the first time i made it just like it was written, but the sauce was too thick and sticky and too "just peanutty". the last couple of times i've made it, i've followed other reviewers suggestions and it's made a big difference. added to the sauce about 1/2 cup coconut milk, 1 tsp lime juice, 1 tsp crushed red pepper flakes and more fresh ginger than is called for. good recipe to build from though.

Grandma Kay's Chicken Enchiladas

i think these enchiladas could have been great with a different sauce. nobody in the family liked it...i think it was too cheesy/creamy, tasted like i'd melted velveeta over it. the chicken mixture was a hit though, my hubby and kids were digging it out of the tortillas and eating it anyway. i'm going to use the leftovers and start over with an enchilada sauce this time.

Banana Banana Bread

really good banana bread recipe. first time i made it turned out dry but after reading a few reviews figured i'd mixed it too much. second time around i made sure not to, added some cinnamon, nutmeg, allspice and made muffins. turned out perfectly. very very moist, wonderful flavor!

Sesame Strawberry Spinach Salad

yummy! got rave reviews as a side dish for an easter brunch. wasn't sure how the strong taste of the balsamic would go with strawberries, but i need not have worried. adults and kids alike raved...big hit! didn't need all the dressing so kept it for a regular salad the next day ;)

Peanut Butter Bars I

oh lord, these are so good! just like a reeses! the graham cracker crumbs give it just the right texture too. i think you could get away with a little less butter, because these are seriously rich, but they definitely deserve 5 stars. hubby couldn't stop eating them!

actually a lot better than i expected! i decided to try this because i had all the ingredients already in the pantry, but i was a little wary of how it would all taste together. i'm glad i tried it because it really worked well. i sliced my breasts in half so it wouldn't be so "chickeny" and used flour tortillas because that's what i had. the chicken was very moist, and the sauce was excellent served with spanish rice! not visually stunning, but a nice hot meal that doesn't take a lot of time or finesse :)

Bacon Chicken and Dumplings

this was a really good chowder type soup that was great on a cold evening. my only complaint was that i felt the dumplings were overkill. with all the potatoes you really don't need any more starch... i made the recipe exactly as written and i will make it again without dumplings next time

Lamb Chops with Balsamic Reduction

this recipe was fantastic! i'm not usually a fan of lamb, but my husband loves it so i'm always looking for a way to meet in the middle. this was the way to do that! i followed the recipe just as it is, and used a good quality balsamic vinegar for the sauce. the chops i had were thicker than the recipe called for so i had to wing it with the doneness, but luckily they turned out perfectly :) the balsamic really compliments the taste of the lamb well and i took another reviewer's advice and served it over spring salad with a side of rosemary roasted new potatoes. the best thing about it, is that it was quick and easy...but very impressive on the plate!
