Fish Fillets Italiano

Very tasty and simple. I used fresh basil instead of parsley and omitted olives, since I hate them. Used diced tomatoes with garlic and basil as well. Had Sea Bass and it was delish. Yes, add salt and pepper.

Easter Breakfast Casserole

Made this for after prom party so I made it more teen friendly...no peppers, green onion instead and half ham/half bacon. Also I wanted more than 11X7 so I added more of everything and it was great.

Corn and Red Pepper Chowder

Made this last night...it was definitely more than 15 mins prep time, but more importantly it was very bland as the recipe stands. I had to add more S&P and then grated cheddar cheese to make it something worth eating. With the additions, it was enjoyed, but would not make it without the cheese.

Chicken Breasts in a Sour Cream and Wine Sauce

This was really delicious! I usually don't cook this fattening of meals, but it was NYE and splurged. It reminded me of a recipe I had years ago made very similarly, thanks for posting! PS. I think the bacon and almonds are fairly unecessary, flavorful enough without them.

Catherine's Spicy Chicken Soup

This is a great soup! It's not that spicy though so I added a can of Rotel tomatoes and left out the can of whole tomatoes. Also added some cumin for flavor. Cook this longer than 30 mins for sure cook down and thicken up a bit.

Penne with Spicy Vodka Tomato Cream Sauce

I love vodka sauce but had never made it before, so I gave it 4 stars. But it is a very simple sauce to make and can be made as is. I hate to read a recipe and see 10 billion remakes of it, so I won't do that. The only little bity changes I made was dried parsley instead of fresh (even easier) and little dried basil as well. This is an easy weeknight meal.

Penne with Spicy Vodka Tomato Cream Sauce

I love vodka sauce but had never made it before, so I gave it 4 stars. But it is a very simple sauce to make and can be made as is. I can't imagine making this as is...used marinated artichokes and they provide the majority of flavor here, as long as you go EASY on the lemon juice! Used grape tomatoes as suggested by others as well. Also, use some feta IN the skillet but most on top after plating it up.

Tomato Gorgonzola Soup

Made this for a vegetarian friend who is battling cancer. It makes a very small portion, so I had to start again on another batch and took advice from others and put that batch in the blender and then added to the first batch for a creamier texture which still had some chunkiness too. She loved it!!

Slow Cooker Spinach Marinara Sauce

This recipe just doesn't work with the given measurements of just about everything. Too much tomato paste for sure and DEFINITELY too much crushed red pepper. I only added one TBSP and it was way spicy. Herbs were overboard as well. It was a thick mess once cooked, so I added red wine, diced tomatoes, water, anything to thin it out. This recipe has good "bones" so if you just use this as a guide and you are a skilled cook, you can make it work. I would also cook on low for 4-6 hours only.

Striped Pesto Dip

Taste is good, but very dependent on purchasing a qulality jar of pesto! A bit difficult to layer...esp the cheese mixture on top of pesto! May try to pipe in the cheese mixture next time.

Carrie's Bruschetta Appetizer

I only gave this 4 stars because I had to change it so much for a much better, easier, fresher version. No NEED to cook anything but the baguettes! To the cheese mixture, add one clove pressed garlic and spread on toasted baguettes. Mix together chopped tomatoes and basil (add salt and pepper to taste) and top each baguette. Sprinkle with shredded parmesan (not mozzarella) and enjoy!

Quick Chicken with Asparagus and Provolone

I only had 2 ingredients that needed to be used, fresh asparagus and chicken and this recipe came through for a quick easy dinner. The fresh asparagus is a must in my opinion and I also added some julienne cut sun-dried tomatoes (in oil) to each breast before layering asparagus and cheese and it was a great addition! Hubby really liked this and I just kept the chicken plain for the kiddos! Thanks for posting.

Grilled Sausage with Potatoes and Green Beans

This can easily be made more tasty by using white wine instead of water. I also added soy sauce and crushed garlic for mucho flavor! Also, only about 1/2 tsp. pepper is plenty. Family loved it.
