Catherine's Spicy Chicken Soup
This is a great soup! It's not that spicy though so I added a can of Rotel tomatoes and left out the can of whole tomatoes. Also added some cumin for flavor. Cook this longer than 30 mins for sure cook down and thicken up a bit.

Slow Baked Beef Brisket with Gravy
I submitted this recipe and just wanted to mention that I do not drain the mushrooms, the juice is needed for the gravy. Enjoy!

Penne with Spicy Vodka Tomato Cream Sauce
I love vodka sauce but had never made it before, so I gave it 4 stars. But it is a very simple sauce to make and can be made as is. I hate to read a recipe and see 10 billion remakes of it, so I won't do that. The only little bity changes I made was dried parsley instead of fresh (even easier) and little dried basil as well. This is an easy weeknight meal.
