Easy Chocolate Truffles

I thought this recipe was fantastic! I made the chocolate in the morning and let it sit in the fridge untill later that night. It worked great and tasted wonderful. I shaped the truffles into mini eggs and coated them in a lot of powdered sugar (you couldn't see any brown) They looked like mini eggs. Everyone loved them.

Peanut Butter Easter Eggs

I made this recipe according to the recipe and they turned out great. My only complaint was that they were difficult to form because of how dry they turned out. I made another batch with a few modifications. I added an extra cup of peanut butter and enough milk to bring the mixture to the desired thickness. I also added a Tbls. of vanilla. The extra peanut butter and milk made creamy peanut butter eggs, everyone at work raved about these!

Broiled Tilapia Parmesan

Wow! I popped this in the broiler and had dinner on the table in 20 min. A favorite for nights when my son has Tae Kwan Do until 8 p.m. The only thing I didn't like was the amount of lemon. It came out to tart for our tastes. I reduced it to one Tbls.

Broccoli Cheese Soup

This is one of my all time favorite recipes! I have been making this for years now and just had to review it. This is a great platform recipe you can use to create all kinds of great soups from. I love to add shredded carrots or cauliflower to change things up, too!

Super Hot Cereal Mix

I used the recipe exactly with the exception of the raisins. I wanted to be able to make different varieties of oatmeal depending on my mood and didn't think it would greatly affect the main dish. I think this is a fantastic base and will definitely become a staple at our house. The only thing I want to mention is that you will need to add more brown sugar and water than specified. I couldn't taste any sweetness at all but I prefer that for my base. That way it can be changed for personal preference. The water amount was fine to start but after five minutes or so it was gummy and hard. My son likes to eat it in the car to school so we will have to put more water so it stays creamy. Add In Tips: Cinnamon, Sliced Almonds, Sugared Pecans, Dried Cranberries, Dried Apricots chopped, Sauteed Apple Pieces, Maple Syrup, Caramel Trail Mix...the list goes on and on.

Spiced Pumpkin Seeds

I have not met anyone who doesn't love this recipe. Even I can't stop eating them and I don't care for pumpkin seeds. I double or quadruple the sauce depending on my mood and who I am making it for however. Its a great way to use all the seeds we pull from pumpkins when making pumpkin pie or jack-o-lanterns and a perfect gift for friends. Put your seeds in cold water for a few hours before trying to separate them then separate in the water and it should make it easier.

Russian Tea Cakes I

I really enjoyed these but were surprised at how dry they were. Be prepared! Have tea or milk nearby. I followed the recipe but after trying one I coated the whole batch two or three more times in powdered sugar. I found a vintage Christmas tin and lined it with tissue paper. I put the cookies in a single layer and then put parchment paper on top followed by more cookies. I gave this as a gift with Chai Tea and a cute mug.

The Best Rolled Sugar Cookies

The name and description says it all! I make these all year. I roll the dough into a log and wrap with saran wrap and store in the freezer. When I need cookies I either let the log defrost in the fridge or I slice off how many cookies I need. Let defrost for a few minutes then bake as directed.

Master Recipe for Rich and Creamy Cheesecake

"Best Cheesecake Ever!!!" Everyone who has tried this has said those exact words. I made almost exactly as the recipe said. I did leave it in for an extra ten minutes or so because I didn't think i was quite ready. I also changed water level used in the baine-marie since I didn't have a deep enough pan that my spring-form pan could fit in. The water was only an 1 inch or so deep but I didn't have any cracks and it baked perfectly. I also used a pie crust recipe due to personal preference. Soo yummy, I want to try a chocolate one next!

Creamed Eggs on Toast

I didn't care for the recipe but my son liked it. I can see how this would be a favorite comfort food if you grew up with it. Its very bland and filling. I was bored with it even though I added sausage, salt and pepper. If I were to make it again I would change a few things to make it more flavorful. I would definitely add onions, garlic, paprika, and cheese on top. Plus, less sauce. I would want the eggs to be the stars but they seemed to be a filler for this recipe instead.
