Low-Fat Refried Beans

as written, it's an alright base recipe - but a little bland and dry. after i added more hot sauce and a little broth it was much better. i still gave it 3 stars for creativeness of the low fat-ness of it :)

really good! i did make a few adjustments after tasting though...i added some more water to thin out the peanut butter - because it was as thick as peanut butter... :D and i added some more rice vinegar to add some more tang.

Rice with Black Beans

good base recipe. didn't have a ton of flavour - but since i was serving a spicy main dish that was alright. next time i'll definitely add some more flavour though. i also cooked the rice seperately and then added it in, seemed to work well that way. i also didn't add the bean liquid - there was plenty of liquid from the tomatos - but i can see how you'd need more if you're cooking the rice in there too.

really really good! but very greasy - which surprised me... i will absolutely be making these again, but i'm going to play around to get rid of the greasiness - also - i completely omitted the white sugar and they were still plenty sweet... and i had to cook them a lot longer!

Crispy Potato Pancakes

great recipe! i've been making these for years and the result is a nice crispy pancake! my only change is to use fresh garlic instead of garlic powder - i hate garlic powder! it doesn't taste nearly as good as the fresh stuff! also, i served them with tzatziki - SO good!

Baked Trout Fillets

This is a good recipe... I swapped half the sour cream for mayo based on previous reviews and i thought the sauce was delicious. And my husband ate all his fish and half of mine! My only complaint really is that i couldn't taste the fish at all - and it was a nice cut of fresh fish. i think i would make this again but use a cheaper fish - maybe those frozen fillets you get in bulk.

Quinoa with Mushrooms

as written, it's a good base recipe - but there's just no wow factor. i love quinoa, i eat it all the time; and the onions and mushrooms were a nice addition...but it just needs "something" to bring it to the next level.

Chuck's Favorite Mac and Cheese

it had a nice taste but the texture was just not my thing...i even blended the cottage cheese into the milk to make it smoother...and it was still all seperated - the cheese wouldn't stick to the pasta at all... but the taste was good - and i really liked the bread crumb topping. i used olive oil instead of melted butter.

Vanilla Pudding

this had a really nice flavour to it - a little too sweet for my husband, but i didn't mind! :D my only issue was with the consistency... i cooked it for much longer and it was still quite thin. and i let it cool in the fridge and it was still rather runny - but we both scrapped our cups so i guess it didn't bother us! :D oh - and i caught the cat licking the cups - so she approves too!
