Shrimp Scampi Bake

This is a yummy recipe! I tried it on shrimp and then again with flounder. Both times it was delcious. What I liked about this recipe was the fact that it was quick and easy and yet very yummy. I added a dash of red pepper flakes to notch up the zing factor!

Indian Chapati Bread

I no longer need to go to the indian resturants to order chapati bread...this is it! I didn't have flour, so I ran down to my nearest indian food store and purchased a bag of "atta" which is a blend of wheat and whole flour. I added a pinch of dried onions to the mix and used a cast iron frying pan lightly sprayed with pam. It was delicious. I appreciate a fellow reviewer, Mr. John D'Eye and served my chapati bread with the curried chickpeas. A definate keeper in my recipe box!

Eggplant Rollatini

The only reason why I didn’t give the recipe 5 Stars was because I seasoned the ricotta cheese with some onion and garlic powder with a pinch of freshly ground oregano, and I choose to bake the eggplant instead of frying it. Other than that, this recipe is very delicious and very forgiving. You can add into this recipe and it’ll still come out yummy. My husband and kids truly enjoyed this version of eggplant. I’ll definitely be a keeper in my recipe book. Many thanks to the readers who shared their reviews and added some insight.

Home-Fried Potatoes

This receipe brought back many memories of Saturday mornings and all my family around the breakfast table waiting for Mom to serve up her famous home fried 'tators and eggs. I wouldn't change a thing! Yummy as is!

Fried Green Tomatoes

Here's a secret that I learned from a special friend in Georgia when she made "FGT"...she used a mixture of yellow corn meal and flour and she seasoned the egg batter with soul seasoning, then cooked in bacon grease...(she's an old timer)Just thinking about this makes my mouth water! Yummy & delicous!!!

WOWEE! This recipe gets 5 stars from me as it is easy, quick, and delicious! My finicky daughter tried this recipe in her cooking class at school and came home raving on this recipe. I knew this would be a hit so I quickly researched the recipe and duplicated it at home. She was right as this recipe is delicious, easy and a definite crowd pleaser. Grilled Garlic Artichokes

Let me start by saying I never made cooked artichokes before, and was so surprised on how easy and tasty this recipe is. I wouldn't change a thing! Even my fussy child ate the artichokes so this gets five stars!

Mango Salsa

Wow! What a delicious recipe. I doubled the recipe ingredients since I had two ripe and very sweet mangos on hand and served it over my spicy grilled salmon with couscous and it was a huge hit with my dinner guests. A tip I learned many years ago is to let the lemon/limes juices sit with the onions first for about 10 minutes, and then add other ingredients. I didn’t want to use the jalapeno chile pepper, so I used two dashes of red pepper flakes instead and it just enhanced everything without the added heat. I’ll be saving this recipe in my “recipe box” to use again! I definitely recommend this recipe!

Ground Beef Stroganoff

I tried this recipe last night and I have to say that it is a good “starter” recipe for basic Beef Stroganoff. I read all the feedbacks and comments so I was prepared to use additional ingredients. I started with a can of the cream of mushroom condensed soup, fresh garlic instead of ground, increased the mustard powder, and added some salt & pepper to taste along with the other items that is listed. To quote my husband, “it looks a bit rough, but it tastes good” and to me, that is what counts!
