The first time I ever cooked red beans and rice i over spiced them to the point that the water turned a bright dangerous red color. I was about 13 at the time.

Vicki's Hush Puppies
So simple and so delicious! I ran the onion through the food processor, cut back to 1/4cup sugar, added 1tsp baking powder & 1-1/2tsp salt instead of self-rising meal/flour, and a sprinkle of cayenne. Absolutely perfect.

Addictive Sweet Potato Burritos
I also used black beans, as other commenter suggested. There were absolutely delicious. It was one of the first dishes I made as a new vegetarian and it really inspired me.

Connie's Zucchini "Crab" Cakes
This was pretty tasty. Mine ended up with a little too much bread and not enough zucchini, so I'll use less crumbs next time. The refrigerated leftover patties made nice ground meat(less) crumbles which I used to make veggie tacos.
