Banana Bread - Quick Bread for Machines

My first try at banana bread-NOT this recipe- in my machine was a flop and I had not tried again for a long time. But I was very pleased with this recipe. I did add another 1/2 a banana because I had some that needed used. Mashed the banana before adding. My bread machine is old and does not have many options on the settings. On quick bread setting and used a spatula to push down the flour a couple times. Used light setting but will use normal next time because the very top was still a little raw when done cooking. I think that is a common problem with quick breads in a machine? Nice firm texture. I ate it toasted with peanut butter for breakfast until it was all gone! The last slice was eaten Elvis style this morning-PB and bacon.

Outrageous Warm Chicken Nacho Dip

This is just awesome. I had purchased the ingredients to make this for a picnic this weekend and planned on a double batch. Picnic was rained out but I really wanted to try the recipe. Had not bought the jalapenos because kids and wimpy adults were in on the original plan. Any other time we a re big on thos little peppers. I did up the amount of black beans just a bit because we love them and visually it looked more balanced color and texture wise. Did put the beans in at the beginning too. Will use this recipe again for sure with some fresh peppers and probably regular onion chopped coarse versus the little green ones. Probably will also try it with other meat options although chicken is my fav. I think it would be great as a filling for a wrapped in tortillas baked enchilada style dish but would then probably cut back on the Velveeta style cheese so it is a bit firmer. The recipe as is, IS the bomb for a dip. My husband and I are in heaven with a huge batch of this dip all to ourselves!

Broiled Tilapia Parmesan

I used this mixture on extra large shrimp and it was devine. Just coated the shrimp, broiled for about 5 minutes and that's all. We cook a lot of shrimp so I was really happy to find this recipe for fish which I thought looked really good for shrimp. Also used tilapia the same meal with the same recipe. Did a little seafood night. If ya all try my suggestion of the shrimp variation, please keep in mind that you should use shrimp with the shell off. Other wise all the yummy is getting thrown away with the shell. And you will not need to flip the shrimp over. They will cook in zoom time. I will also try this again on other fish.

Grandma's Harvard Beets

We all think our own Grandma's recipes are the best, don't we? And you are so right. These are superb! I used fresh beets which I had precooked and then reheated in the sauce as it simmered. Best Harvard beets I have ever had. The butter was the crowning touch. YUM!
