Salmon in Lemon-Dill Sauce

Reviewed: Oct. 9, 2012
A cavalcade of cuisine delight! The flavors are heavenly! I used 1 cup of Alfredo sauce instead of milk and cream and I used scallions instead of a shallot. I added one diced garlic clove to the scallions. After returning the salmon back to the iron skillet, I baked it 15 minutes at 400 in the oven. (My stove boils on low!)

High Temperature Eye-of-Round Roast

Reviewed: May 28, 2010
I did everything the recipe called for and my roast was a little tough. Also, my oven was cold after 2 1/2 hours. I believe an oven must hold the heat very well for this recipe to succeed and I'm not sure most ovens do.

Fruit Cocktail Salad

Reviewed: May 28, 2010
Fast and easy! The only thing I did different was drain the juice from all the cans of fruit first. Then after adding and mixing fat-free, sugar-free vanilla pudding, I added the juice until I liked the consistency. Then I drank the juice that was leftover! Love Love it!

Tastes-Like-Beef Turkey Burgers

Reviewed: May 28, 2010
They really did taste like hamburgers. After reading the reviews, I decided to use only 1/2 of a packet of Onion Soup mix and I added a couple tablespoons of bbq sauce. This recipe is one of our favorites now! Great Recipe!

Chile Rellenos

Reviewed: Dec. 5, 2009
Chili Rellenos, and their variations, are always my favorite. I use Tempura Batter Mix, it's quick and easy. Mix using beer instead of water until the desired consistency is met. I also use strips of velveeta cheese, I love the taste and it melts faster than cheddar or jack. Also, try leaving the seeds and membranes in the pepper, I never remove them, some peppers are hot and some are not. I love the Poblano peppers, but all the peppers mentioned are a great choice. And, lastly, definitely use Canola oil. It's less greasy than vegetable oil and more healthly.
