Beef and Spinach Curry

YUMMY! I used stew beef and took the advice from others and simmered it with vin & baking soda for two hours. I also doubled the spices and threw in a bit of hot madras curray powder because I like it spicy. Hubby LOVED it - no left overs. Will be making again and again. Thank you for this recipe!

Easy Iced Coffee

I'm a coffee snob and would NEVER use instant coffee, but this recipe had a lot of good reviews so I decided to try it. So glad that I did! It's better than than the iced coffee I get at starbucks! I used splenda and a little bit of vanilla - just for my personal taste - SO GOOD! Thanks!

Bloody Mary Chicken

My hubby thought the taste was good, but we were hoping for a thicker sauce - I did add alot of extras - onion, bell pepper, garlic, can diced tomatoes. Tried to thicken it up with cream cheese and even corn starch but it just wasn't what I hoping for. I shredded it and served over pasta. It is very easy to make and smelled great, but I don't think I will try this one again - but that's just my personal taste. Sorry

Aunt Mary's Eggplant Balls

yum, yum, yum! I made this last night and loved it. I didn't have grated parm cheese and I think if I had that it would have been even better. Also didn't have fresh parsley so had to add dried, but even if I had it I don't think I would have added an entire cup. I added a few of my own prefered spices, made into patties and served with sauce on top. I will be making this again and again! Thank you Lynette!

Roasted Garlic and Eggplant Soup

I'm giving this 4 starts as written. It's very easy to make and is very tasty, but I thought it was missing something. I tried making it again and added more cayenne pepper and lots of hot curry. Once I added the the curry it was more the taste I was looking for.
