Root Vegetable Gratin

This came out really good!! I used all the veggies suggested and split it into two smaller casseroles. I split the sauce between them and added a little more cream since I needed more liquid. I mixed the parmesan in with the layers. I baked covered at first and uncovered for the second half at the lower temp and it came out perfect. Great flavor.

Pumpkin Turkey Chili

I was looking for a recipe to use my leftover pumpkin carvings in and this worked out great! I just cubed and steamed the pumpkin. You can mash it a little too. I also added in some corn, green chilies, black beans with some cumin and paprika. This turned out amazing and I will be making it again... in fact it may be my new Halloween pumpkin carving night tradition!

Broccoli with Rigatoni

Delicious! This turned out better than I expected with the reviews claiming it was bland. I tried my best to stick to the original recipe but I did add onion with the garlic and pretty much tripled the cheese. I know it isn't exactly as healthy with all the cheese but it really turned out great when it melted and soaked up some of the broth making it more of a sauce. With my changes I give it 5 stars but as is it would have been a little bland so I gave it 4. I will make this again. It was very quick and my husband gave it two thumbs up.

Toasted Almond Chicken Rolls

I loved the flavors in this dish. My husband and I are on opposite shifts so we don't get to eat together but he called me on his lunch break to tell me how good it was. I served this with a spinach rice casserole and steamed asparagus.

Tina's Greek Stuffed Peppers

Very good recipe. I was looking for something to use up the last of my orzo and I love stuffed peppers so this one really caught my eye. I added about 1/2 C pine nuts and just a sprinkle of parmesan on top. I also cut my peppers in half (stem to base) for smaller portions. I prefer my peppers a little softer than these came out so next time I will bake them for 1 hr. Thanks for the recipe!

Zucchini Alfredo

Great taste but I used spaghetti noodles since it is what I had on hand. I would not suggest this to anyone else. The shredded zucchini and pasta was the same size and shape and made the texture a little strange.

Shrimp and Feta Cheese Pasta

Very nice flavors! My husband is mildly allergic to shrimp but couldn't keep himself from going back for seconds. He broke out in hives later but said it was worth it! Thank you for the great recipe.

Spinach Stuffed Chicken Breasts

Very tasty! I precooked the bacon a little bit since I like it a little crispy. I also browned the chicken really quickly before stuffing since I like the flavor. The feta mixed in very well and was not overpowering at all. Great recipe!

Rolled Tacos

Very yummy. I mixed in some green chilies and a little cheese. I folded them like mini burritos to keep the cheese in. I served with Mexican rice and sour cream. This recipe really makes a lot. I still had leftovers after using the entire package of tortillas so I will make some quesadillas with the leftovers. Thanks for the quick easy recipe!

Great base! I beat 3 eggs into the vinegar and then hard boiled 2 more to chop and add later. I also added chopped celery and topped with chopped green onion. I will use this again!

Crispy Chipotle Lime Tilapia with Cool Avocado Sauce

Very good! I used 1/2 the can of chipotle peppers in adobo sauce. Seeds and all, we like the extra kick. The avocado sauce was great for me but my husband thought it could use a little extra. Next time I think I will add some cilantro, onion and hot sauce to give him that extra flavor he was looking for. I served this with Mexican rice and corn. I will definitely be making this again!
