Slow Cooker Pernil Pork
My family loved this recipe! I doubled the spices and tripled the vinegar on a 4.5 pound roast, and the finished product had a delicious kick without being too spicy. My kids ate the pork in tortillas (like street tacos), while my husband and I whipped up some pseudo-Chipotle bowls with lots on onion and fresh cilantro. So, so good!

Sweet and Sour Beef and Cabbage
My family LOVED this meal! It was surprisingly simple to make for my big bunch, and even my children went back for seconds. I was woorried that the ACV would make the meal bitter, but the sauce was surprisingly mild with just the right amount of tang. Because there are so many of us, I increased the ground beef to two pounds. (I left all the other ingredient measurements the same.) I served it over arborio rice.

Banana Banana Bread
This banana bread recipe is perfect! I've heavily relied on my breadmaker for years, but when it broke this week, I was lost when my bananas began turning brown. I made this recipe, and even if I ever replace the breadmaker, this will be my go-to. My loaf was just dense enough, just sweet enough, and oh so yummy. I made one loaf just as directed, and I now have two grain-free loaves (replaced all-purpose flour with almond flour) baking now.
