About this Cook
I have been cooking or my hubby and myself and family for 34 years. By day, i work in a special ed. class and love it. I love to read, needlecrafts and going to the gym.
My favorite things to cook
Dinners are my favorite meal to prepare. Whether in the oven, top of the stove or on the grill, dinner is my preferred meal of the day.
My favorite family cooking traditions
My favorite tradition is to cook thanksgiving dinner and have everyone here. It is reminiscent of the house i grew up in which was small but we had holiday dinners there together at the table. I wanted to have my own traditions for my own family so we have holidays here. My parents are both gone now but my kids still like coming home to Mom's dinner table.
My cooking triumphs
One thing that comes to mind was preparing all the food for my kids' graduation parties. so many guests were here and i was surprised i made enough food! the kids were impressed with having chicken marsala along with everyone else. at the end of the night when my daughter came and gave me a hug thanking me, i knew the day was successful.
My cooking tragedies
One thing really stands out! i was only married a short time when i wanted to make a veal roast for my husband. needless to say, i kept putting it back in the oven when it didn't look done. i eventually threw it out. I found out later on that veal is supposed to be eaten with a little pinkish color to it. I have never cooked another one again!

Ukrainian Chicken Kiev
I would give this recipe 5 stars simply because it sounds delicious! The next time I plan chicken cutlets for dinner, this is the recipe I will try.

Baked Coconut Shrimp
Followed this recipe to a Tee. For my dippingsauce I used about 2 TBSP. crushed pineapple mixed with about 1/4 cup orange marmalade. For just two of us, this sauce was more than enough. It was finger-licking good!!! I will definitely mke this one again in the future.

Spicy Peach-Glazed Pork Chops
I made this recipe the night before last with a few changes. I used twice the amount of wine called for because I wanted a saucier sauce. I added cranberry sauce leftover from the night before from chicken. It added a nice tangy taste as well. Also, as I had fresh peaches on hand, I peeled, sliced and added that as well. I can see myself using this sauce again for a stir fry either using chicken or beef.
