Classic Tuna Noodle Casserole

Reviewed: Mar. 17, 2010
Great base recipe from the past! Just swap out ingredients to your hearts desire. Chicken or ham for the tuna, the cream of whatever soup to change your flavor, 1 tomato & 1 cream of, gives a nice sauce if you use ground beef or turkey. This is the original 'Helper" before you could buy it in a box.

I give this 5 stars for ease of preparation. It sounds really tasty. I'll try it but make this change. The beef cubes are usually really salty....I recommend substituting beef broth.

Jelly Roll

Reviewed: Mar. 7, 2011
Followed the recipe exactly w/o the 2% milk, whole. It turned out perfectly. The jam in my photo is homemade Elderberry jam, made by my son & daughter-in-law. One hint: if you use the cream cheese filling, you might want to reduce the amount of jam. The cream cheese prevents the jam from sticking to the cake and the excess oozes out.

SHORTCUT!! Use your bread machine set on manual. I have a little trouble with my hands, the machine does all the kneading, I get the credit :-)

Porcupine Meatballs II

Reviewed: Jun. 21, 2010
Wow! thanks for the recipe. I used to make this in the pressure cooker 10 min @ full pressure. Sometimes I chunked up a few potatoes to cook along, the meat and tomato soup made great gravy! Haven't had it since my presto needed a gasket seal and was told the gasket wasn't available because my cooker was obsolete!!

Sour Cream and Chive Mashed Potatoes

Reviewed: Feb. 21, 2009
Good recipe! I like anything that takes the 'plain' out of mashed potatoes. I do this but to make it easier (and just as tasty), make whatever amount of potatoes you need. When I make potatoes just for the two of us, I just whip in any leftover sour cream dip we have. Bacon/horseradish is really good. If making more spuds, just use the whole tub. Keep in mind the salsa-type don't work.

Porcupine Meatballs

Reviewed: Jan. 4, 2012
My Mom made these when my brother & I were kids, we loved 'em'. She always added potatoes right with the meatballs and they cooked together, yum! I made these for my three boys, they loved 'em'. Now my Presto is obsolete, can't get seals for it anymore, I have to do this on the stove top. It's just the two of us now but we still love 'em'. I just simmer the meatballs in the tomato gravy till they hold their shape then put 3 or 4 chunked potatoes on top cover and simmer till they're tender. Oh, yes, switch out the tomato soup and chunk potatoes for Campbells Golden Mushroom and serve with mashed potatoes! Yum, definitely 5 stars

Fluffy French Toast

Reviewed: Aug. 10, 2010
Similar to mine so they've got to be good. I've been using 1/4 c all in one pancake flour for quite some time. A light grind of nutmeg & a dusting of powdered sugar and it's fit for a king!!!

Applesauce

Reviewed: Sep. 3, 2013
Made this in the microwave. Used 7 C. sliced apples which I dipped in a Fruit Fresh solution and quickly drained, this means I skipped the added water also. Left out the spice, we sprinkle that in when we serve it. 7 C. apples produced a scant 2 1/2 C. sauce. Used an old fashioned potato smasher and left it lumpy. Hubby says it's better than store bought!

Fluffy Pancakes

Love that they're thick. Not thin like some packaged mixes make. (I know, too much liq.) Leftover buttermilk worked in place of the soured milk. No biggie. The best part was throwing in a handful of blueberries picked from the bush by my back door.

Oatmeal Whoopie Pies

I know my husband would love these, one cook said they're Like little Debbies and he gobbles them up but I'd much prefer making my own. Now here's my ???. For the filling, are the egg whites just beaten, are they foamy, soft peaks, stiff? I'd hate to wreck the cookies w/a silly mistake.

Slow Cooker Cassoulet

Reviewed: Apr. 15, 2010
Great recipe. Made no real changes except no wine in the house, used chicken broth, the rest of the can of broth I mixed in with the next day leftovers. Had an Easter hambone in the freezer, threw that in to use it up. Really good with the Italian Bread using a Bread Machine recipe that Destiny posted on this site. YUM!

Simple Waldorf Salad

Loved this. Plumped the raisins in some screamin hot water while I prepped the rest of ingredients. Used an extra apple, leaving some bright red skin for color and added one more stalk of celery. When serving, I added a few grinds of fresh cinnamon just because I wanted to :) Delish!
