Dijon Mustard Baked Catfish

I should have made the peppers into quarters, got better done that we prefer. I added the sauce over all the veggies as well as fish and was a nice flavor. Thanks for the recipe.I will make again.

Herb Baked Catfish

I ground the herbs together to mingle the flavors and instead of the dried basil, I had some left over basil pesto so rubbed that on the fish before adding the other herbs. A keeper recipe, thanks.

Mint Ice Cubes

I do ice cubes of many herbs, the hot water releases the oils in the plants, replacing the darkened, spent herbs with fresh after cooling is preferable. Just pop out the frozen cubes into labeled freezer bags and you are ready for many uses, from drinks to stews and everything in between.
