Buttermilk Pancakes II

This has become our "go to" pancake recipe. We usually add a splash of vanilla, as my hubs and daughter love vanilla. Very easy to adjust the serving sizes as long as you remember to make it divisible by 4. We like over-sized pancakes and usually get 2.5 servings out of the 4 serving recipe Update -I was on my own for breakfast so I added a dash of cinnamon and some toasted and chopped pecans...took it to the next level of awesomeness!

Eggplant Croquettes

These were delicious. I did saute the onion first, as I hate biting into crunchy onions. I elected to bake these and served them as burgers with jarred sauce rather than the traditional burger toppings

Corn Dog Muffins

Great base recipe. I skipped the brown sugar all together and didn't miss it. I've used plain hot dogs and cheddar jalapeno ones - both are great. I also chop them up into little pieces to ensure hot dog in every bite. Another twist is to use cooked breakfast sausage links and have them for breakfast dipped into syrup. - Updated - Just want to mention that I've found them easier to remove from the muffin tin if I let them cool off about 5 minutes

Country Apple Dumplings

Very good for such simple ingredients. I halved the recipe and used 1/4 cup sugar and 1/4 cup brown sugar. I also added some pumpkin pie spice mix that included clove, nutmeg, cinnamon, etc.

Disappearing Marshmallow Brownies

Sweet Restaurant Slaw

Delish! I was a bit worried that it would be dry when I was mixing it; however it was just perfect after a few hours in the fridge. I did add a little celery seed at the end, but it did not really need it. Thanks

Flourless Peanut Butter Cookies

Caramels

Very good. It is important to note that it does take time; however the results are worth it! Lots of requests for these around the holidays. UPDATE - after making these several years, I think I've found out why they take so long to get up to temp for me. The heating element on my electronic stove cycles. Keep that in mind if you are making them on an electronic stove top.

This was ok. It was a basic recipe that needs to be tweaked. I used half ricotta and half sour cream and fresh parm. I also added some fresh basil and topped with more when served.

Slow Cooker Enchiladas

I have made this twice, once as written and once with shredded chicken and cream of chicken soup in place of the beef and cream of mushroom. I prefer it with the chicken. Good base recipe that can be tweaked to match your tastes

Fluffy French Toast

Let's put it this way, when I asked my 15 year old daughter and friend what they would rate this recipe they both said 18! I did let the milk and eggs come to room temp, like I do when I make pancakes. Thanks for sharing the recipe

Thanksgiving Leftover Casserole

To die for! Added more turkey and halved the recipe as it was just two of us. We ate the whole thing and would have gone back for more but there wasn't any. Great starter recipe that can be very forgiving

Barbeque Halibut Steaks

Made this tonight as written and let me say it was fantastic! I loved the crunch bit where the grill marks were. Will make again and may marinade for a bit before hand to get the flavors throughout,especially with the thick halibut we had. Thanks!

Swedish Cookies (Brunscrackers)

The first time I made these almost according to directions - switching corn syrup for golden, and baked them in two rolls and they did not turn out at all. The second time I did them as drop cookies and the taste was very good. Great tasting, but I had issues with the method
