Bow Ties with Sausage, Tomatoes and Cream

Used ground beef instead of sausage. Used einkorn linguine pasta (a much better version of wheat - available on Amazon) instead of white pasta. Taste really good!

Blueberry Pie

OMG, this was soooooo good but I changed it up a lot (used healthier ingredients). I used a spelt pie crust (purchased at Sprouts). Used a oatmeal crumb topping. Used arrowroot instead of cornstarch (used 5 tbps but needed more arrowroot because 5 tbps still made it a little bit runny). Used piloncillo sugar instead of white sugar.

Oatmeal Pancakes II

I love this! I substituted the all purpose flour for spelt flour, buttermilk for milk, quick cooking oats for bob's red mill thick rolled oats, and white sugar for ground panela sugar. Turned out Very moist and tender!!!! For a more buttery taste, use ghee to cook the pancakes. Yum!

Blueberry Cream Muffins

Baked these muffins yesterday and they were marvelous!! Very moist!!! I agree the reviewers that said it taste bland if you don't adjust the recipe somewhat. I added more sugar (i used panela sugar, not white sugar), chia seeds (for a nutritional boost), cinnamon, and nutmeg. I also used creme fraiche instead of sour cream. With panela sugar, it made it less sweet than white sugar but it actually has some nutrition. I will definitely make this again!

Garlic Chicken Fried Brown Rice

This is the best way I have found to eat brown rice!!! It's quite addicting too. I made this w/o the bell pepper and vinegar. Used yellow onions instead of green onions.

Best Big, Fat, Chewy Chocolate Chip Cookie

I enjoyed them especially when they come out of the oven. I reduced the sugar and amount of chocolate chips. I followed a lot of the suggestions given, for instance: after mixing everything, refridgerate for some hours; kept eggs at room temperature; melt the butter; leave in oven for no more than 7 mins; leave on the tray for a minute or so. I made small batches instead. But if you follow all of that, the cookies will not burn and will turn out the way cookies are supposed to be - soft, moist, and the chocolate chips melting in your mouth. In addition, they were still soft the following day.

Roast Sticky Chicken-Rotisserie Style

I brined the chicken first so I skipped the step to to marinate the chicken in the fridge overnight. I followed the rest of the recipe but I think I left the chicken in the oven a little too long. It wasn't that juicy or tender. I did bask the chicken with butter. I will try this recipe again and update.

Best Brownies

I just made these and it is NOT the best brownie. I've eaten a far better brownie than this. If not for the icing, it was would have been a little dry. It did make it tasty. I however followed a lot of tips from several reviewers: doubled the recipe to better fit a 9 by 13 pan; tried not to overmix; used a fork to make the icing; added a few tbsp of milk to the icing. In short, it almost tasted like chocolate cake with icing instead of a brownie.

Baked Ziti I

This is such an AWESOME dish!!!! I changed it up a little. I used 100% whole wheat penne pasta, since I couldn't find whole wheat ziti. Made my own spaghetti sauce (used the "world's best lasagna" meat sauce and this includes italian sausage). Instead of sour cream, I used creme fraiche. Using creme fraiche gives this pasta dish a very delightful, favorful taste!! I covered it in the oven like some reviewers suggested. Shared some with a friend and she loved it. Trust me when I say this tasted SOOOOOOOO good!! You can't be disappointed!!!

Spelt Biscuits

Going off on all the reviews saying these biscuits are so tasty, I got excited. Now, I've never used spelt flour. Followed the recipe (only reduced the salt like other reviewers said) but I wasn't impressed with the taste. It definitely taste better than whole wheat though but the biscuits taste very, very plain!!!

Mexican Rice II

Made it for my 1st time for my co-workers and we all enjoyed it. The only thing is it was kind of bland and needed more flavor. So next time, I would add a little more salt than the recipe calls for and much more cumin.

David's Yellow Cake

I've made this cake several times but only 1 layer (cut it down by half) and it's one of my favorites. Better than a yellow cake mix! Sometimes I top it with caramel frosting. Love it!!!!

Easy Red Beans and Rice

LOVED IT! I looked at other reviews before preparation and it did look like this would be bland so I used Zatarain's Creole seasoning like one reviewers mentioned. Don't need to add salt since this seasoning has a lot of salt. I didn't have sausage, so I used beef that I thinly sliced and added diced habanero pepper to spice it up (i love peppery/spicy food). I used dried beans and cooked it in a slow cooker. Omitted the tomatoes. This is a great way to eat beans!!
