Carrot Cake III

I had trouble getting this to cook all of the way through in a 9 x 13pan. I was more successfull baking up as a layer cake.

Navy Bean Stew

A little bland as written since I used sweet Italian Sausage. I added a bunch of Mrs Dash to keep it low sodium and this helped.

Amazingly Easy Irish Soda Bread

I followed the recipe exactly except that I did add some dried cranberries. I had trouble getting it to cook all of the way through without getting to brown on the outside. Next time I will lower the temperature and plan on baking longer.

Cottage Mashed Potatoes

This was very good- I did drain the cottage cheese because it looked like it would be too wet. I also cooked the onion in a small amount of butter before I added it to the potatoes.

Delicious- I didn't have any croutons so I used panko bread crumbs mixed with curls of parmigean cheese and this did provide the crunch.

Easy Mashed Potato and Roasted Vegetable Enchiladas

Sounds weird but is great. My daughter is vegetarian so I am always looking for recipes that will please both my carnivore husband and my vege daughter- both loved it. I did not have any mushrooms but did have a red and green bell peppers that needed to be used so I substituted. I also added some cumin, garlic powder and a little chili powder to the potatoes which worked out well. The only thing is that it made about 18 enchiladas and I used the large corn tortillas- no one complained about the leftovers though.

Fluffy Peanut Butter Frosting

This made a great filling for a chocolate cake. I used a chocolate ganache for the top and sides of a four layer cake and this was a perfect light and fluffy filling to offset the rich chocolate. Next time I think I'll frost the whole cake with this- but it might need to be doubled to do that.
