Norwegian Potato Lefsa

I grew up eating Lefse even though not Norwegian. My mom used leftover mashed potatoes and cooked them on the griddle our stove had. We used the Lefse to wrap up leftover turkey, stuffing and cranberry sauce sort of like a Burrito! We never had it with butter and sugar and I will have to try that next time although they disappear so fast we don't really need another way to use them.

Been making this for 50 yrs, still one of my favorites. The only difference with my mom's recipe was using candied cherries instead of marischino, probably because we made these at Christmas time.

Curried Coconut Chicken

Simple and very tasty. The only changes I made was I added fire roasted diced tomatoes instead of stewed tomatoes (all I had) and at the end I added some shredded coconut because I love coconut. The sauce thickened up for me and the tomatoes disappeared. I did not find it tasting like canned soup at all, perhaps this comes to the quality of the ingredients and not the recipe.

One Dish Chicken and Rice Bake

Looked too bland as is so I changed it as follows. Used a mixture of rices using 2 cups. Used chicken broth, 2 soup cans worth along with 2 cans soup. To rice mixture I added sautéd onions, red bell pepper and cremini mushrooms. I also put in a couple cups of frozen mixed veggies. Stirred rice mix together and added to a covered casserole. Chicken went on top but I pushed it in a little. I then sprinkled Mrs Dash on top and baked covered until chicken temped. The rice was creamy and there was a lot of flavor. My family wants me to make it again ASAP.

Pie Crust IV

Pie crust was flaky and supportive to a juicy berry pie. I added the water slowly and found I only needed 1/4 cup so make sure you follow the recipe.

Lime Cheesecake Pie

Very refreshing. I used a purchased graham cracker crust and it was larger so I doubled the filling recipe and it was perfect. My family ate it in no time so I have no idea if it would store well

True Blue Custard Crunch Pie

Wonderful. I made the pie exactly as the recipe called for and it was perfect. I am not a big fan of blueberry pie but this was not too sweet and with the crunch of the pecans it had nice contrasts in flavor and texture.

Broccoli Pie

I too added salt and pepper. I also used fresh broccloi which I blanched and chopped the flowerets. I also baked it in a 9x13 pan. I don't usually include so many changes when rating a recipe but upon reading the other comments... We really enjoyed the recipe with these changes.

Sam's Famous Carrot Cake

Very moist. I used half whole wheat flour and my family really enjoyed the cake. It was nice to serve something that is not overly sweet (no cream cheese frosting) and have them like it.

Amazing Whole Wheat Pizza Crust

Tastes good, I let the bread machine do the mixing. I made two 12" pizzas and they held up to alot of toppings. Nice to know you're getting a little extra with this recipe.

The Best Bean and Ham Soup

I made it with a couple of changes since I didn't have all of the ingredients but I don't beieve they changed the recipe significantly. I used all vegetable broth and used fresh parsley, I also added more ham since we had so much left! This was wonderful. I served it once with home made wheat bread and once with corn bread (a savory recipe) and it went with eiher. I froze about a third of it and am looking forward to using it- we had a heat wave so I am waiting for cooler weather.

Golden Rum Cake

I have made this several times- and it works every time. I have used spiced rum with the yellow cake mix and it is wonderful. I used Kahlua with dark chocolate cake mix and it was also wonderful. So easy.

Pumpkin Cheesecake in a Gingersnap Crust

Excellent great alternative to pumpkin pie. I followed the recipe exactly and had great results. I have made this several times- I have topped it with a sweetened sour cream topping and that works well for a little twist.

Pork Chops with Apples, Onions, and Sweet Potatoes

Very good but the pork chops were a little dry. Next time I will brine them first. Great combination of flavors and add a salad and you have a complete meal.

Raspberry Tart

Easy and delicious. I made it as is the first time but the second time I had a bunch of strawberries to use. I used about 2 lbs strawberries instead of raspberries and I added about 3/4 c chopped pecans to the crust and used an 11" tart pan instead. Delicious- I used sugar free raspberry jam and served it with lightly sweetened whipped cream. It was delicious and not too sweet.

Impossible Buttermilk Pie

I had some buttermilk and strawberries to use up so I decided to try this recipe. Although I bake alot I had never made one of these pies or even eaten it. I baked it alot longer than the recipe called for and it was still very runny on the bottom. I didn't sweeten the strawberries when I tasted the pie and used them to cut the sugar- it would have been way to sweet without them. It was good with the berries and some lightly sweetened whipped cream but all in all I will not make again.

Shrimp Creole IV

Very good. I did have to substitute red bell pepper for the green as none in the frige. I also sauteed the veges in olive oil as I did not have any bacon. I am sure that the bacon would have added some smokiness so next time. I cut the cayenne in half since my husband and I don't like really hot food- we like spicey but not hot and it was just right. It did take a while with the cleaning of the shrimp and making the broth- I did this the night before, but if you are short on time I would suggest buying your shrimp already cleaned and deveined and there are some good fish stocks available.

Butternut and Apple Harvest Soup

I roasted the squash, carrots, apples and onions along with some sweet potatoes (which I sub'd for the white potato) I think the roasting intensifies the flavor. Delicious soup.
