Christmas Breakfast Sausage Casserole

I have been. Along this for years with one tweak. My family always asks for it. One day I couldn't remember an ingredient so I was happy to find a similar version here. Instead of bread , I line the bottom of the pan with frozen potato cakes. Delicious. Also the recipe tastes great when you bake it right away but it holds up much better when it sits overnight.

Slow-Cooker Chicken Tortilla Soup

This recipe is delicious. I make it over and over again. Everyone craves it and I love how I can throw it all in the slow cooker, go away, and come back to a delicious meal! What I do to change it up sometimes is to cook my own chicken (heavily seasoned. Don't be afraid to experiment with flavors), add a can or two of black beans, and add a shredded mexican cheese blend. To taste. I've done 1 cup to 1 pack. Just play with it.

Roasted Brussels Sprouts

Made these tonight and they were delicious. I baked them in olive and white truffle oil. I also added 1/2 teaspoon each of onion and garlic powders. In the end I added cheese just because I love cheese. Delicious!

Bar-B-Que Sauce

I would honestly rate this 4.5 stars. It was delicious! I followed the recipe pretty much. A few dashes of hot sauce and fresh garlic since I didn't have garlic powder. I also added a teaspoon of season salt and 1/2 tsp of black pepper. I think the next time I will use a little less vinegar and a little more hot sauce. Besides that DELICIOUS! My hubby is probably trying to sneak and lick the pot as I'm typing this! I used the sauce on [Cleveland, OH style] Polish Boys. It's a keeper!!!

Baked Salmon II

Delicious!!!! I've love salmon, but hadn't tried basil on it before. I was skeptical but not only do I now love salmon even more, I love basil too! I made it this way and it was delicious of course. Then I tried a few other combos and was equally pleased. One of my variations was delicious but don't be afraid to play with the measurements. I don't measure so I'm giving an estimate. I wouldn't go TOO heavy on everything because you may wind up with too much flavor. I used 4 (6 ounce) fillets of salmon (no skin) and rubbed about half to one teaspoon of olive oil on each side. I poured a teaspoon of lemon juice on each side. (Sounds like a lot but isn't) Then I added the following items both to the bottom of my pyrex baking dish and to the top of the salmon after I put it in the dish: (all dried and same measurements for top and bottom) 1.5 teaspoon of basil, 1 teaspoon of oregano, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1.5 teaspoons parsley, 1 teaspoon minced garlic, 1/2 teaspoon dill weed, 1/2 teaspoon mint, 1/4 teaspoon of thyme. Cover with foil. Place in preheated 350 degree oven. Cook for 20 minutes. Take off foil and cook 5-10 more min. uncovered. You can add more salt and lemon juice after baking if u like.
