Chunky Monkey Pancakes

My son requested these for his birthday. These are perfect with only 1/4 cup mini choc chips. My kids thought there were too many with 1/2 cup but just perfect with 1/4 cup. The thing I love about this recipe is with the choc chips in it I don't need to add syrup & by using mini chips you don't have to use as many because they disperse so well. Also, I love them with fresh sliced banana on top. Few pancakes actually fill a person up but these do with sliced bananas on top are perfect for the whole family.

Blueberry Zucchini Bread

Wonderful-I'm hooked on zucchini! Used 1C whole wheat/2C all-purpose & 2 cups frozen blueberries in 2 mini-loaf pans and one 8.5 X 4.5 pan. My kids & I inhaled 1 whole loaf in 1 day. Also enjoyed the zucchini-chocolate chip muffins recipe on this site (double the recipe & increase the choc. chips if you try that one!)

Zucchini-Chocolate Chip Muffins

This & the blueberry zucchini bread recipe are the first zucchini recipes I have ever made & I am hooked. Definitely double the recipe (you can always freeze the left overs). I used 1 part whole wheat flour to 2 parts all-purpose. Used regular size chocolate chips and agree with other reviewers that if you consider this a chocolate chip muffin recipe, you will definitely want to increase the amount of chocolate chips. I followed the recipe, but will most likely double the amount next time. Batter was nice and thick so I could use my pampered chef scoop to place the batter into the muffin cups for little spilling and quick clean-up.

Apple Sheet Cake

Incredible-favorite of everyone. My 5 year old has been requesting these for months now. I call these 'apple pie bars'. This is the only recipe I ever spend the time making home-made dough for & it is well worth it. It's a big pan, but they get eaten fast! Let's be realistic, it takes time peeling/slicing apples & rolling out the crust if you're not used to it (I bought a tupperware rolling sheet & that helps me a ton). I usually cut the frosting amount in half-it's just too much. These are just as good refrigerated as they are fresh. Forget apple pie & move on up to this recipe!

Rhubarb Cream Delight Dessert

I get asked for this recipe every time I make this. Even hubby who isn't crazy about cheesecake or rhubarb enjoys it. No precooking the rhubarb or anything-a glorious dessert and not much work. Also, it doesn't use a ton of cream cheese which helps keep the cost down. I actually double the recipe and use a 9X13 baking dish since I could eat an entire pie myself it's so yummy! I use 7 cups of finely chopped rhubarb when doubling. This last time I used frozen rhubarb-(keep in mind I doubled the recipe) I thawed it and was nervous about how runny it was so I mixed 4 Tbsp flour with the rhubarb and baked the crust with the rhubarb an additional 10-15 minutes. I also baked the cream layer an additional 5-10 minutes and was very satisfied with how it turned out.
