Swordfish a la Siciliana

awesome, soaked fish with milk and seared the swordfish and baked 8 on one side 10 on the other like someone suggested. it came out perfect. I only had 1lb of swordfish, but made the same amount of sauce, so I cooked up some spaghetti and tossed it with the remaining sauce and some Parmesan and layed the fish on top of it. Used can of diced tomatoes with juice and another clove of garlic as a mod. definitely would make again. you could just take the sauce and make it with spaghetti if you wanted and it would suffice.

Chicken Paprikash

Great dish packed with flavor. I used hungarian paprika like someone suggested, which i think gave it some more kick. Also, threw some onion, paprika and garlic powder into the dumpling batter for some extra flavor. will definitely make again.

Italian Summer Squash Polenta Bake

this was great. Instead of using tomato sauce, add some garlic, a little more salt, and a can of diced tomato's to the vegetable mixture, and cook a little longer before pouring over the polenta. Also used orange peppers instead of red, turned out great.

Swordfish Calabrian Style

this was great. I didn't have canned fava beans so I had to cook them myself. I cooked them in the pressure cooker which did an ok job, but left some of them mushy. this actually worked to this recipes advantage because it created a kind of white wine, onion, fava bean sauce which really went well with the swordfish. Not sure how that person overcooked the swordfish, it came out perfect for me.

Crispy Catfish

simple, tasty, and came out great. used half breadcrumbs/half flour mix which gave it a good flavor. i also chopped the catfish fillet's into about 16 semi-bite sized crispy piece's - I highly recommend.

Limehouse Chicken

this was great. i had thinner chicken breasts so i baked only for 25 minutes instead of 45, and they came out incredibly tender. i threw some broccoli and orange peppers in with the broth and wine too. The orange/yellow peppers really gave it an authentic taste and look. definitely adding my arsenal of recipes.

Restaurant-Style Taco Meat Seasoning

came out great, made it with the cornstarch instead of the corn flower because i didn't have it. I also made it with ground turkey meat - which was surpisingly good. will definitely make again.

Artichoke Chicken

i did not use marinated artichokes used 1/4 sour cream and 1/2 c. mayo as suggested by others. Flavored chicken with salt and pepper. This one is super easy and extremely flavorful. keeper for me. artichokes were absolutely delicious.

Basil Pork Chops

quick prep time is great and has pretty good flavor. Used olive oil, but didn't run into the sweetness that a lot of people talked about when Cooking with a cast iron skillet on the stove. I Might add some more spicyness next time, but overall a good quick meal.

Barlow's Blackened Catfish

Very tasty, the cayenne and pepper really penetrate the fish. I agree with most other people, use a lot less salt, and half the cayenne pepper Another suggestion. I had a 1/2 pound catfish, and cooked it on 350 for 20 min, and it came out a little dry so I would check it after 15 to see how it is making out. I made this over brown rice, the italian dressing sauce that's left over flavored the rice beautifully.

Penne with Spicy Vodka Tomato Cream Sauce

This was great, didn't change the recipe much at all. Just added some fresh chopped spinach and a little squash to the sauce and it came out great. Used a 1/4 cup vodka too per someone else's request. Someone mentioned it was too much salt, that may be if the sausage you use is salty, so adjust the salt accordingly.

Chinese Style Sesame Sauce

Good Tasting Recipe, I Totally agree with everyone else on the sugar. I thought my teeth were going to fall out after. I substited the Chile Paste with 1 tablespoon garlic chili sauce i had in the fridge. It Gave it a spicy kick.

Broiled Tilapia Parmesan

Great Recipe, added 1/2 cup breadcrumbs, and replaced the butter with olive oil. Came out terrific and because you only spread it on one side it doesn't overpower the taste of the tilapia (i like tasting what food i'm eating)
