Desert Island Food Confession …. What’s Yours?

I had a New Year’s Eve dinner party a couple of years ago, and one of my guests came prepared with a quiz:
If you were to spend the rest of your life on a desert island – and could only bring 3 foods – what would they be?
Wow.  Pick?  Food?  Me?  Really??????  Impossible. There are so many that I LOVE!!! 
I needed to be a good host, though, so I actually thought about it.  I came up with...good crusty bread, brown sugar glazed ham, strawberry ice cream, homegrown tomatoes, cheese (oh cheese), peanut butter......!  These were just the beginning of my favorites, how the heck could I pick?
Well, by the end of the evening, I had made my decision.  I picked simple and satisfying foods that had been on my top list of favorites ever since I could remember.  As it turns out, they’re the same ones that I’d pick today.  I think I could live with them forever….. but I'm sure glad I'll never have to!  Here they are:
English muffins
Diet Coke
(I’m a little embarrassed about the Diet Coke, but, a girl’s gotta have a little fun!)

Coffee, hummus & pita chips (if you eat them in the same bite, they count as one food, right?) and chocolate....there's gotta be some tropical fruit hangin' around here somewhere, right?! ;)

Bread Peanut Butter Diet Coke I eat peanut butter on wheat bread every day for breakfast. I really think I could live on it! Also, I completely relate to the Diet Coke obsession. Really.

My must-haves are coffee, spaghetti and meatballs (this is not 2 foods! they go together, honestly) and dark chocolate (in any form).

Thanks all~ I rarely get to indulge in my spaghetti and meatball obsession :( My lovely husband does not like red sauce, shocking** I know. It's entirely his mother's fault though, apparently she made some pretty bad spaghetti while he was growing up and he refuses to budge on his dislike. However, MY spaghetti and meatballs is fabulous. Takes all day and dirties every utensil, pot and pan in my kitchen. But, it's so worth it....*sigh* Well, at least I have coffee and chocolate

wow. only three? that's tough. I would definitely have to say DIET COKE. Huge fan of it, I am! Cassano's veggie pizza with extra cheese, and brownies with white icing!

Absolutely positively my first choice would be Popcorn!!!! then add some Diet Coke and Chocolate and I'd be in heaven on a desert island!!!

About Me
I recently returned to work full time and -- life's gotten pretty hectic. I have 2 really busy (and really hungry) teenage girls, a very active husband and an old yellow lab who really misses having me around the house. I love to cook and feel that sitting down to a meal with the family is really important. Unfortunately, I don't have the time or, frankly, the energy, to put a lot of work into meals every night. I'm determined to figure out how to get a delicious and healthy family dinner on the table with a minimum of fuss. As I figure it out, I'll post on my blog.
My favorite things to cook
I went to culinary school, taught cooking classes and read cookbooks for entertainment. Do we eat a gourmet meal every night? No way. Weeknight meals are quick and easy and, usually, nutritious. Weekends are when I have fun with my food. My weekend favorites: anything Greek, anything Italian, breads, soups and braises. I like trying new foods and techniques and love to have dinner parties.
My favorite family cooking traditions
Dolmathes (Greek rolled grape leaves) for birthdays, gnocci for Christmas Eve, pitzelle cookies with my Italian pitzelle iron, jack-o-lantern cake for Halloween and avgolemono soup for whoever is in need of comfort.
