Dennie's Fresh Lobster Salad

I don't know why I didn't rate this last September when I first made it to serve at a Cousins Brunch I hosted for my mom. Just couldn't stomach the price of lobster, so used crab. Added a pinch of Old Bay, finely minced celery and a squeeze of lemon. Amazing, just amazing! Am going to make it tonight to serve for Superbowl tomorrow, but with shrimp, the recipe really adapts well to any shellfish. I can't wait to try this with lobster, I'm sure it will be over the top! Thank you for sharing, it's a big hit at my house with family and friends!

Bolognese Stuffed Bell Peppers

Wow, really yummy! I'm giving 4 instead of 5 stars, because if I would have followed the amount of ingredients, my peppers would have only been 1/2 full. And I didn't have huge peppers, just regular size. I used 1 full cup of cooked rice, 1 pound ground beef, 1/2 pound italian sausage and I added onion and garlic. The rest, I just doubled the ingredients and used homemade marinara. Really, really yummy, my family chowed on this, thank you!

Donut Muffins

Ok, how come mine didn't turn out like the picture? Don't get me wrong, LOVE the taste, they are really yummy. First batch, I followed to the letter. They never rose up much, very low, and a bit crisp. For the 2nd batch, I lowered the temp to 350 and did 1-1/2 times the batter and added just a touch of baking soda. Up they they went over the top but didn't puff up, just spread. YUMMY, really good, but I really wanted poofy little muffins! I'll keep experimenting, they are that good to give it more and more and more tries. My family is not complaining at all, thank you!

Apple Cider Chicken Marinade

I had high hopes for this as even though there were not many reviews, most of them were good. I really wanted to love this, considering I had all the fresh herbs for this straight from my garden and stuck to the exact ingredients and marinated overnight. Overwhelming taste of lemon, none of the vinegar and nothing to offset that taste. I'll stick to my own garlic/herb marinade that uses all of the same herbs, but with white wine vinegar and honey from now on. Thanks, but sorry, no go for my family.

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

Who would have thunk you need a recipe for hard boiled eggs, but I did and thank you! Not sure if it was the ice bath, the vinegar, the salt... who cares, it works! My mom did hard boiled eggs for deviled eggs for Easter and griped the whole time about the shells sticking. So I made these for her this way today and she was so skeptical until the shells just slid away! It's kinda nice to say "I told you so" to your mom, even when you are 44 years old!

Pepperoni Pizza Muffins

You know what, these were good! I didn't have tomato soup, so I used a can of V8 and omitted the water, but I don't really think the taste would be too much different anyway. Used turkey pepperoni. Can't wait to mix this up with sausage, and I'm so going to follow another reviewer idea and cube of the mozz cheese next time. I'm going to end up making this alot, I can tell! Thank you for the great idea!

Baked Potato Soup I

I've made this a dozen times already, don't know why I haven't rated it before. Love, love, LOVE this soup! I always make a double batch, the leftovers are so good. Just thin it out with some milk or chicken broth. I do use a combo of fat-free 1/2 and 1/2 and 1% milk, totaling 6 cups. Then I add 2 cans of chicken broth, because I'm making a huge batch here! I also cook the green onions in the butter before I add the flour. It's so good and comforting! Thank you so much!

Dark Chocolate Cake II

Amazing, simply amazing! I made exactly as is, except that I did use another bowl to whisk my wet ingredients before I added to dry, and I was bad and added some chocolate chunk pieces :) I made in a 9X13 and topped with my own chocolate cream cheese frosting. Made this for a 50th birthday party and had many people tell me it was the BEST cake they ever tasted. Thank you so much for sharing, it was SO GOOD!

Mushroom Rice

Made this tonight to go with my Magic Fry Talapia and OMG, it was PERFECT! Only change I made was to use shallot instead of green onion and I doubled it to feed a crowd. I am a bad rice maker, but this turned out just perfect. Would give it 10 stars if I could, thank you!

Cream Cheese Frosting II

Perfect, perfect, perfect! Exact correct amount to frost 24 cupcakes, holds up wonderful and tastes amazing! Thank you! UPDATE: Made this into chocolate cream cheese frosting by adding about 1/3 cup unsweetened cocoa powder. Frosted Dark Chocolate Cake II also from AR and WOW! I love this frosting, it is just perfect, don't make any changes, just make it!

Hot Cocoa Mix in a Jar

Very, VERY GOOD! I added just a pinch of nutmeg and cinnamon to lend a bit of holiday flavor. My husband is HOOKED! ***HINT*** to get it to all blend and not have floaties (from the powder sugar) add 2 heaping tbs to a mug, then add just a bit of boiling water and mix together into a paste. THEN add the rest of the boiling water. Comes out nice and smooth, just so yummy! Thank you for sharing!

White Chocolate Covered Pretzels

Excellent! I got mini twists and also added a bit of shortening and sprayed my racks with Bakers Secret so they would not stick once cooled in the fridge (over night). Dipped the entire pretzel, then covered with mini red and green non-pariels and they were wonderful! Thank you for sharing!

Chocolate Zucchini Bread I

Very, very good, more like a cake than a bread! I followed other reviewer suggestions and cut back on sugar to 1-1/2 cups. I also used semi-sweet chocolate squares and I added about 3 Tbs of unsweetened cocoa powder and 1/2 tsp of baking powder to get more of a rise. Just mix the mini chips with the dry and they DON'T SINK. You MUST let it cool in the pan; I sprayed mine with Bakers Secret and did it in a glass pan and a metal pan, they both slipped right out. I drizzled with powder sugar icing (just powder sugar and milk) and it was RAVED over. Thank you for sharing!

Fudge

This is perfect! I also used 1 cup semi-sweet and 2 cups milk chocolate chips and for fun added a splash of Grand Marnier and a splash of vanilla. Perfect chocolate taste, nice and smooth, not grainy. Everyone LOVES it! Thank you for sharing!

Chai Tea Mix

Really, really GREAT! I did add the extra spices as recommended. I also could not find ANY non-sweetened instant tea mix (does it exist?). So I just cut that back to 1 cup instant tea and used 1/2 cup of regular sugar (mixed with the vanilla extract, I didn't use the powder vanilla) and it turned out better than any gourmet shop. ***HINT*** so that everything mixes together well, I used 2 heaping tablespoons in a mug, added just a bit of boiling water and mixed all of that to a slurry, then added the rest of the boiling water. No floaties in the cup, nice and smooth! Thank you for sharing!

Raspberry and Almond Shortbread Thumbprints

Almost perfect! I did as others suggested and put the cookies on a baking sheet then in the fridge for 10 minutes before I filled with jam. And I added probably a tablespoon or 2 of milk (like I normally do with any shortbread recipe) for a better dough consistency. I had no issues with spreading or leaking jam. And I used a spicy plum jam that was home made by a friend. The sweet and spicy combo with the almond icing is simply amazing!

Sweet Potato Casserole V

I meant to review this after I made them for Thanksgiving. EXCELLENT! I made exactly as stated (except the topping, I added a handful of finely chopped pecans) and even people who said the don't like sweet potatoes, gobbled these up. It has to be the eggnog. Or the sweet nutty topping. These were so very good, thank you for sharing!

Salad Dressing Cupcakes

Eh, these are just ok. I was looking for a quickie recipe to make with my nieces who turned up at my house unexpectedly. The kids loved them but I couldn't get past the texture and the look. We didn't use the cocoa powder, just left them plain, maybe that was the difference in texture, I don't know. I would do this again for the little kids who care more about the frosting anyway.

Pastry Cream for Pies

YUM! This was perfect! I doubled the recipe to use as a filling to Heavenly White Cake (also on AR) and put fresh sliced strawberries on top of the custard in between the cake layers. I did use cornstarch instead of flour and I didn't use the double boiler. I just tempered the egg yolks with the hot milk mixture then added back to the pot and whisked and kept whisking and not a lump was found. There was a bit left over and I ate the next day with the left over fresh strawberries. So fantastic, thank you for sharing!
