Stuffed Butternut Squash

Very nice. Also diced my squash into a casserole. Cooked wild rice in organic veg broth with the garlic and carrots. Sub'd kale for Brussels sprouts and skipped the milk -- used a few teaspoons of olive oil with the tamari and turmeric to coat the squash, chickpeas, green onions, and kale in the casserole. Added the rice to the dish after it was baked -- took maybe 30-45 minutes to cook the squash. Everyone liked it. It was also good topped with some shredded organic chicken breasts with roasted green chilies, diced onion, dried tomatoes (cooked with the breasts), oregano, and cumin, etc. Yum.

Bachelor's Hash

Very tasty. I like that it is relatively easy (took a while to chop onions and grate potatoes, so next time I'll use frozen hash browns and buy onions already chopped), but if you don't add a bunch of sauces and cheese, etc., it's fairly healthy. Kind of like a soup in casserole form. I might try adding some garlic and maybe some tomatoes or tomato paste next time. But overall, I liked it. I also had trouble fitting this recipe into an 8x8 pan -- had to cut back to fit it in my pan -- needs a very deep 8x8 or a larger pan for this recipe. Also had trouble getting the bacon done and wound up frying it and putting it back on the casserole. You could skip the bacon if you didn't want to mess with it or wanted to avoid the fat and it would still be tasty. Didn't find it bland at all -- maybe the bland reviews didn't use enough salt?

Fettuccini Carbonara

Excellent, but a heart breaker. This recipe called for an entire package of bacon. Are you kidding? Now I LOVE bacon, but this could give you a serious heart attack just thinking about it. I did it according to the directions the first time and it was very tasty even though I forgot the garlic. (And why add oil when you're going to saute the onions in the bacon grease anyway?) NEXT time, however, I plan on microwaving the bacon on paper towels to get the stuff cooked faster (it took forever to saute) and get the fat crispy without loading the dish with bacon grease. I will save a strip or two to saute the onion. I might even cut back on the quantity of bacon. But otherwise it is really good. I didn't give it 5 stars just because it's a total artery clogger.

Hash Brown Quiche

Made this for a brunch and it was well-received. Very tasty -- I made myself a second pie the next day! I shredded my own potatoes and didn't bother with rinsing or drying -- didn't even peel them and they were just fine. I used cooked bacon instead of ham and used an Italian blend of cheese from Safeway, since I didn't have any cheddar handy. It was delicious. I used only 4T of butter in the second pie and couldn't tell the difference. It's definitely not heart-friendly with all the butter, but mmm, mmm good. Next time I may try to add a bit more egg/milk and some spinach to make it a bit healthier. But will definitely keep this in the recipe rotation.
