Mexican Pasta

This recipe was both simple and delicious. I didn't add the green pepper and olives just due to family preference. Used a fresh ear of corn, advocado and because we are doing a vegan challenge this week (we are vegetarian) I added a bit of vegan cream cheese. I fed it to a roomful of manly carnivores and they devoured it!! Excellent recipe!

Portobello Mushroom Burgers

This was so YUMMY! I added carmelized onions along with the cheese on a bun and it was absolutely delicious! My new grill go-to instead of veggie burgers :)

Pecan-Crusted Walleye

I made this tonight and it was wonderful! I did find a pecan panko breading mix at Whole Foods so I didn't have to add much seasoning but the fish cooked perfectly. Served with some risotto and fresh advocado/tomatoes. Super quick and easy summer week night dish.

Jose's Shrimp Ceviche

Wow! This was so tasty and simple to prepare. My boyfriends mom is an excellent Hispanic cook and he said these were pretty darn close to hers which are fantastic! We were a little leary about just using the lime juice to cook so I added the shrimp to boiling water for about 2 min then put them in an ice bath before chopping up and adding it to the lime juice. I then let it 'cook' in the lime juice for about 30 min. I followed the recipe as written from there. I served the ceviche on fresh corn tortillas That were baked till crunchy in the oven. Excellent recipe, I know this will become a fresh, healthy staple in our house!

Cheese Fondue

I made this for a party at a friend's house and everyone loved it! So yummy- I did prepare it over the stove before adding it to the fondue pot and it worked very well!

Easy Tuna Casserole

This dish was wonderful! I pretty much made it as described except for adding an extra can of tuna (you wouldn't have to), and using 2 cans of cream of mushroom soup- which was a personal preference. It's even tastier the next day! Thanks for the recipe.

These were absolutely wonderful! I had to use fresh basil instead of thyme. Didn't have capers so I used a basil/mayo combination. I grilled them outside- can't wait to have one again!!

Cheesy Eggplant Bake

I thought this was super yummy! Other than the time commitment it took to prepare the eggplant, I thought the rest was ez. The only changes I made were using diced tomatoes and freshly shredded mozzerella and parmesan reggiano. So it only took an extra 10 minutes to bake after adding the cheese. I served it to my parents and they both loved it too. Thanks again!

Carrie's Artichoke and Sun-Dried Tomato Pasta

This was a yummy recipe! I did make a couple of changes because of what I had on hand. I used bow-tie pasta and I didn't have any white wine, so I had to use cooking wine. Threw in a few less artichokes than the recipe stated (a few goes a long way with me!), and used kalamatta olives. The saltiness in the olives nicely balances the tang of the dish. Might omit the fresh tomatoes next time and throw in some spinach. Otherwise, great, easy recipe, and it was even tastier the next day!!
