Chicken and Broccoli Alfredo

Soul Smothered Chicken

Excellent! My first attempt at smothered chicken. I used boneless chicken thighs as I don't like eating meat from the bone unless it's fried chicken (a weird quirk I know). Will definitely make again. Only problem was no leftovers!

Cajun Chicken and Sausage Gumbo

Fabulous! Used smoked sausage and added one can of Rotel with green chilies. Just the right kick, not too spicy. Even my 1 year old grandson like it.

Chili Dog Casserole I

Sirloin Steak with Garlic Butter

Awesome! I didn't grill but pan seared, sauteed an onion and then made a gravy as suggested by another reviewer by adding butter, milk and Worcestershire sauce. Then I poured it all (including garlic butter) into a casserole dish, topped with some chopped mushrooms, covered with foil and baked for about 25 minutes at 350º (don't like rare steak). Very tender, didn't even need a knife.

Old Fashioned Potato Salad

Very good. Be sure to use real mayo. I started out with lower fat canola mayo and the flavor was just not there. I had to run out at 11pm and by a small jar of real mayo to get the desired taste and creaminess as I was making it to go along with my ham for Easter. Potato Salad always tastes better the next day after the flavors have blended. I also added 2 more boiled eggs and extra mustard. I used a mixture of red and idaho potatoes, just for the heck of it.

Kathy's Roast and Vegetables

Excellent! Followed recipe except I cut up an onion and sauteed it with some minced garlic after browning roast. I also put in a bag of frozen stew vegetables instead of carrots when I added potatoes and a Bay Leaf. Cooked 6-1/2 hours and the meat was tender and juicy. I removed roast and tented it with foil and added some cornstarch to thicken sauce in the crockpot. It made a delicious "vegetable" gravy. I sliced the roast and returned it to the crockpot and served it from there. No need for extra pots and pans.

Quick and Easy Tuna Casserole

Fantastic. Didn't have noodles so I used elbow macaroni. Sauteed onion and a little minced garlic. Added milk, a little sour cream and about 5 slices of crumbled bacon and Celery salt. Topped with buttered corn flake crumbs mixed with Parmesan cheese. Baked at 350º for 20 minutes to brown topping.

Chicken Tetrazzini IV

Very good. Not bland if you season the chicken to taste. Used poultry seasoning, sazon season all, white pepper. Also sauteed mushrooms with a chopped onion and minced garlic. Used 2% milk instead of heavy cream and added some finely shredded monterey-jack cheese to rue. Also added finely crushed corn flake crumbs with Parmesan to make a crunchy topping. Will definately make again.

Don't Chicken Out

Excellent! I also seasoned chicken with adobo, salt and pepper. I added onion and garlic to near-browned chicken and then added sauce and other seasonings along with a small amount of water. I added flour to thicken and served over rice. A nice change for chicken.

Oven Fried Chicken II

Very good. Added seasonings (Lawry's seasoned salt, lemon pepper, garlic powder, adobo). Used finely crushed corn flake crumbs. I now keep corn flakes on hand just for times when I don't have bread crumbs in the pantry. Comes in handy and works well. Have made this placing butter in pan and also with placing chicken on wire rack. More flavorful in pan without rack.
