"Best biscotti I've ever had," said my father-in-law. Use salted pistachios. If you want crispy pieces, toast at least 15 minutes.

Coconut Bread Pudding

Blueberry-Sausage Breakfast Cake

My husband and I feasted for days! Who would have thunk that sausage and blueberries would create such a delicious combination. We skipped the topping (who needs the extra calories) and kept it in the fridge. Lasted for 4 days until we devoured the last piece.

Spinach Stuffed Chicken Breast

Very yummy! My sister made this for a group of us at dinner and it was a great hit. Note that we simply topped the chicken with bacon instead of wrapping. Turned out great.

Dessert Crepes

This recipes has turned us into crepe addicts. I made a large batch, layered them with wax paper, then threw them in the fridge. We ate them for a couple of days with everything from eggs floretine to whip cream and berries. These suckers are as good as the ones we had in France!

Authentic, No Shortcuts, Louisiana Red Beans and Rice

Oh sweet heavenly goodness of red beans and rice! I used bacon instead of ham (just didn't have any) and loaded up on the sausage (can't go wrong with andouille sausage). Also, add more cajun seasoning and a bit less garlic (unless you're wary of those crazy cajun vampires). Can't wait to make it again!

Finnish Blueberry Pie

Fun! My husband's family is Finnish, so I just had to try this. I thought it needed some vanilla (hadn't read the review) and added a teaspoon. Light and refreshing-which allows you to experience the berry flavor. It's so fast and simple! I can't wait to make this for my inlaws when we head to Minnesota!
