About this Cook
As I have grown older, I have found that the activities that once gave me that adrenalin rush no longer has that attraction. I just couldn't find that sensation in jumping out of perfectly good air planes or scuba diving or trying to bowl that ever elucive perfect 300 game. But it wasn't until I stumbled onto the Food Network and then my wife sent me a link to allrecipes that I started getting that feeling again. Sounds strange, but it was like that first egg on a gas stove that my Mother taught me to cook. What a rush!!
My favorite things to cook
I really enjoy grilling my version of the basic burger; steaks on the grill in the dead of winter is something that my family and friends can't wait for.
My favorite family cooking traditions
In my family, my father had always prepared and cooked the turkey at Thanksgiving and Christmas. I have carried on that tradition. My kids are all grown, but on those holidays, they know Dad is cooking and the turkey is to die for.

White Chocolate Cheesecake; and the moistest turkey you could imagine
My cooking tragedies
Going to the store and leaving my ex-wife to tend the grill. The meal was ruined. And yes, I take the blame!!

Black Lung Braised Brisket
I have always thought that if you are going to use marinade for sauce you should make extra and set it aside. I made the marinade and it is really good but I made extra and discarded the meat soaked marinade in the bag. Very tender...and the name doesn't fit.

Beer Butt Chicken
I have made this many times and most name it "Beer Can Chicken". All are right in using different spices and other fluids can be used instead of beer..coke is one of the best if you dislike the flavor of beer...I have found that making a garlic and butter rub under and in the cavity and on the skin makes the meat very juicy, and season of your choice on the skin and then shake some sea salt on the skin for that crunch....For you smokers..use hickory.

Gumbo Style Chicken Creole
I, like most changed the initial makeup of this recipe.After reading some of the other reviews, I changed the mushrooms and used extra celery, I also added a jalapeno, chopped and seeded. And to the tomatoes, I added a small can of green chile for added heat. Instead of the hot sauce, I went with the cayenne pepper. Like Emeril, I wanted to kick it up a few!! And this is a great way to get rid of left over turkey!!!!
