Mandarin Pork Roast

Very flavorful. A good base for a fruity marinade/sauce/glaze. I've played around with different fruits (Mango, peach, etc..) to good success. (The OJ concentrate can be subbed out for two teaspoons of orange extract, btw. I don't keep OJ concentrate on hand, and found that a helpful note.)

Strawberry Preserves I

Delicious! I only had 1/2 lb strawberries, so quartered the recipe--worked great. Really had to turn up the heat and let it bubble for a while to get it to reach 220. The poor reviewers clearly did something wrong, as I followed the recipe to the T and am enjoying delicious preserves on some fresh-baked bread for breakfast. Can't be beat.

Pumpkin Cheesecake in a Gingersnap Crust

I've made this recipe twice. Once as written, and the second time modified into individual cheesecakes. First time it was wonderful--and the individual cheesecakes went over great as well. For individual-sized cheesecakes, just spray muffin/cupcake liners with baker's joy spray (or equivalent), and axed the maple syrup and hazelnuts from the recipe. Halved it... and ended up with 12 perfect mini cheesecakes. (A trip into the freezer is a must before removing the cheesecakes from the liners). Posted a picture. Great recipe!

I made this recipe as written, and while the result was OK... the bottoms of the breads were overcooked, and it was all together more 'bready' than it should be. I made a second batch with modifications, and it got rave reviews from my dinner guests and office the next day. (I resubmitted my version with modifications to allrecipes, and perhaps it will be published.)
