Kiwi-Lime Pork Ribs

I thought this was a really good dish. I used 3 Kiwis and cut down the salt and chili powder as others suggested. I also used honey instead of white sugar and it was really good.

Chocolate Chia Seed Pudding

I substituted 1 Tbsp Maple syrup (the real stuff) for one of the tablespoons of brown sugar. And left out the coffee. I loved it. My kids had an issue with the texture so next time I plan to blend it in my Vitamix to see if that helps.

Lemon Chicken II

This is one of our favorites! We cut the chicken before we coat and fry it in our turkey fryer. Other than that and maybe doubling the lemon sauce, we make as in. I have also just made the sauce and put it on grilled chicken when I don't want to pull out the fryer.

Flourless Chocolate Brownies

This was great. I used Almond Meal from Trader Joe's. I only had salted butter - so I just skipped the salt. I used semi-sweet Chocolate Chips and only added 1/2 cup sugar. I love the simple ingredients.

Polenta with Two Sauces

My family loved it. I did add chicken to it and thickened it with corn starch instead of flour to make it gluten free. But that was it. I will make it again.

Toddler Muffins

Very good. I had to use what I had on hand, so that was carrot baby food (2 3.5 containers) wheat germ instead of oat bran and cinnamon instead of pumpkin pie spice. Also added a 1/2 tsp baking powder and no carrots because I only had baby carrots and I wasn't sure how many I would have to shred to equal 2 carrots.

Gourmet Chicken Pizza

Excellent pizza. I made it on Pita Bread with Monterey Jack and Cheddar Cheese and bacon bits, mushrooms and sundried tomatoes. It was an excellent easy dinner.

Black Bean Soup I

I loved it. And my family liked it. My 5 year old, 7 year old and husband ate it with corn muffins. I substituted sausage for the ham and used a can of diced tomatoes instead of a fresh tomato. I only did a teaspoon of salt as I thought the broth was probably already salty.

Mrs. Sigg's Snickerdoodles

Great Recipe. We made them today with colored sugar for Easter cookies. A note on the baking time. I've baked them with a metal pan and a Pampered Chef stone. The stone needs the full 10 minutes while the dark metal pan you have to get them out of the oven and off the pan at 8 minutes.
