Cocoa Apple Cake

Really good cake! I replaced 3/4 of the butter with yogurt, which made it really moist and a little bit healthier. My family gobbled it up!

Wonton Soup

This was wonderful! I used rice vinegar instead of rice wine because that is what I had. I also added a little bit of garlic to the wontons. I took others advice and cooked the wontons in water before adding them to the stock. My husband and I ate almost the whole pot!

Pumpkin Bread

Very, very good! I used 1/2 cup of butter and a 32 oz can of pumpkin. It was extremely moist and a bit healthier. My husband and his buddies ate it all in one sitting!

Boudreaux's Zydeco Stomp Gumbo

This is fabulous! I used 2 quarts chicken broth, I think 3 would be too soupy. I also used one 28 oz can of tomatoes instead of a small can + chopped tomatoes. Truly Delicous!

Gourmet Mushroom Risotto

Very, very good! I was worried there was too much liquid but once it sat at the end it soaked everything up and was wonderfully creamy. I used mushroom broth instead of chicken stock because for the vegetarians.

Blue Cheese and Pear Tartlets

If you like blue cheese (which I do) then these are wonderful. If you don't like tangy, strong cheeses, then you will not like these. I doubled the amount of pear, used pie crust instead of filo, and didn't need any cream because the cheese melted nicely and combined with the softening pears. I made them for a small dinner party and thought I would have leftovers, but they were gone very quickly.
