Vegan Chocolate Cake
Fantastic! I made this recipe as cupcakes for my sister's birthday party for her vegan husband. I had baked a regular birthday cake for my sister but I wanted my brother in law to have something sweet to finish off the meal, too. Well, they were a huge hit! I did change the recipe a bit: I increased it to 1/3 cup of cocoa powder, added 2 teaspoons of vanilla not just 1 and substituted balsamic vinegar for the white vinegar and it was delicious! After they cooled, I just dusted the top with a bit of powdered sugar and my brother in law loved it. He said that usually vegan baked goods leave a lot to be desired but he said these were "fantastic." Even the meat- and dairy-eaters among loved them. I made them again for a dinner party we're having tonight and they are just as tasty as they were the first time. thanks for the great recipe!

Allie's Awesome Easy Spice Cake
Awesome! My mother's 80th birthday party was tonight & she loves spice cake. I usually get a box of cake mix, but I thought I'd try to make a spice cake from scratch for her big day. So, I tried this recipe: it was a huge hit! I varied a little from the recipe, however. I used a can of organic apple pie filling that was just apples and water (I was a bit leery of using canned apple pie filling because of the additives), so I added some extra spice to the mixture to make up for the un-spiced apple filling: allspice & ginger. It turned out fantastic. Don't be alarmed if the cake is a bit dark though. I really thought I had burned it but it tasted great. I also added a bit of cream cheese glaze (4 oz. cream cheese, 1 1/2 cups of powdered sugar, 1 tsp. vanilla & 2 tblsp. of milk). Thanks for the great recipe!
