Marrakesh Vegetable Curry

You would think from all the reviews calling for added spice, this is a bland recipe. Therefore, I AM REVIEWING THIS RECIPE FOR COOKS LIKE ME WHO LOVE CURRY BUT HAVE A WIMPY PALATE AND PREFER LESS HEAT IN THEIR DISHES. While I enjoy cuisines that feature spicy foods, I don't like any dish to have too much heat. In restaurants which offer an option about spicing, I am always a 2 or 3. Despite that handicap, I LOVED this curry. It is the first curry I've ever made and it turned out perfectly. I knew enough to cut back on the cayenne pepper (I used 1/4 tsp) and it was still too hot for me. Next time, I will omit it. And there WILL be a next time. WHIMPY EATERS--don't shy away from this recipe: just adjust your spices.

German Chocolate Cake Frosting II

I have made this recipe maybe 25 times in the past year. I have made more than 25 German Chocolate cakes, most for our church dinners and a few for my family. To be honest, I started out making the cakes from scratch, but with this frosting, no one notices the cake. So now I use boxed cakes but get RAVE reviews for any cake that has this frosting on it! I make the recipe exactly as written and just have patience waiting for the frosting to thicken. I do not add any thickening agent: if you are willing to wait, it WILL thicken up and you will be rewarded with an out-of this-world flavor. I attend a church with many amazing bakers and cooks but my German chocolate cake has gone over so well, it was even mentioned in the pastor's homily. Trust me: it's not my cake, it's this icing that people remember. Carol, you have made my cakes a hit! Blessings to you!

Special Buttercream Frosting

I am the kind of person who sits down to a piece of bakery cake and immediately removes the frosting. Icings are often too sweet or greasy for me, so I usually don't eat them. Today, I was looking for a frosting that would hold up in my first attempt to decorate a cake. The ratings and reviews convinced me to try this, especially since so many reviewers found that it held up to decorating. I took reviewers' recommendations to cut down on the shortening and add some butter and to cut the sugar to avoid excessive sweetness. The reviews have been accurate in that this frosting went on well and made great decorations and writing. Unfortunately, it left a greasy taste in my mouth. I even used the whole 8 cups of sugar thinking that this would disguise the greasy mouth feel. No luck. The reviewers are right: this tastes just like a bakery frosting. The rating above reflects that; if bakery frosting is your thing, this recipe is great. If you don't like that sort of icing, you will not like this one.

Ranch Style Oyster Crackers

My 17 year old daughter has the perfect description for this recipe: SNACK CRACK! These are really delicious and we have never made or served them when they did not fly out of the bowl. YES, they are very salty, so we don't make them for a regular snack. But after making them many times exactly as written, we now cut down on the sodium by using salt-free lemon pepper. On this site there is a similar recipe but the seasonings are optional. Do NOT omit them;the seasoning of these crackers make them so delicious that the are totally addicting. THanks,Nina. Chicken Fiesta Salad

I have made this recipe too many times to count. Everyone in my extended family now makes it, too. The picture you have posted does not do it justice. It is extremely fast and simple to make. To save time, you can use packaged salad greens. To save money, cut up heads of romaine lettuce purchased in bulk for not much more than you will pay for the bagged greens. I place the greens on a very large platter and put cherry or grape tomatoes around the perimeter. I always add a sprinke of taco or mexican cheese on the warm corn/bean/salsa topping. Serve with Spicy Ranch dressing on the side. If you want left-overs, only mix together what you will eat for that meal. Save the rest of the components for another meal. This is my daughter's favorite left-over lunch. Thank you for this wonderful recipe.

Butternut Squash Bisque

OK, this might be weird, but if I HAD to choose one food to eat everyday for the rest of my life, I would choose this soup. It's delicious. I have made it five times now and it's wonderful every time. I have made it exactly as directed and it was so good. Now, using some of the suggestions on this site, I bake the squash, a large,sweet onion, and a large sweet potato in the oven and when they are all soft and slightly browned, I pass everything through a food processor. Sometimes, while everything is baking, I boil carrots until they are very soft and add the carrots to the mixture. As a personal preference, I thin the pureed mixture with fat free half and half, then add curry to taste. If you don't like butternut squash, you can't trust this review, but for me, this is soup perfection.

Steak Tip Marinade

For some reason, Costco is the only store in my area that sells steak tips. I'm not sure why because they are a delicious alternative to regular steaks and less expensive, too. In the past I have cooked them by grilling them, basting with our favorite jarred BBQ sauce. THIS IS SO MUCH BETTER! The marinade is delicious and makes the steak tips so tender. I made the recipe exactly as written and found it delicious without needing any modifications. Just beware that the recipe is high in sodium (I am conscious of this now that I am cooking for someone on a sodium-restricted diet). When I can pull it off, I put the marinade and the steak tips in a container overnight. If I only have a couple hours, the steak tips will still be very good, just not as tender. This recipe is a big hit with my extended family. This past vacation, steak tips with this marinade were requested twice in a 2-week recipe rotation. I would add that I did try cooking steak tips and this marinade in the crock pot and I did not like the outcome as much--just my family's personal preference. Thank you, Deanna.
