Whole Wheat Banana Nut Bread

This was a very good healthy banana bread. I used homemade applesauce in place of the oil-just over 1/3 cup. My kids gobbled it all up. Moist and delish-thanks for the recipe!

Mexican Rice II

We love this recipe in our house-it tastes just like our favorite local Mexican restaurant. I do use brown rice to make it healthier so it takes almost twice as long to cook-but it is still really yummy! I also usually double the recipe and have some leftover.

Cream of Mushroom Soup I

Ohmygoodness-this soup is so good! We love this in our house. We get mushrooms at the end of the day from our local grocer when they clearance them and make a huge pot of it. My kids even love it. I try to make this at least every other week-whenever I can get a good deal on mushrooms. I have used all kinds of mushrooms-oyster, portabellas, baby bellas, shitaake, and regular old button mushrooms and it always turns out great. I do make it with fat-free half and half to make it healthier and it is still delish! I have made it with the cream as well and I can really hardly tell a difference. I don't put any of the soup through the blender-too much of a mess for me and I just chop the mushrooms fine enough for our tastes anyway. I also used cooking sherry-because it is just what I have on hand. When I run out of that I will buy some good stuff and I am sure it will be even better. I also freeze the leftovers in 1 quart baggies and use them when a recipe calls for cream of mushroom. Delish!

Cheesy Baked Cauliflower

This was decent-I am always looking for new ways to make cauliflower since I will only eat it cooked. I made much more of the mayo/mustard sauce than the recipe called for-I didn't measure but maybe 1/2-1 C total. I did use dijon mustard. Overall it was pretty good, but we really like the Nany's Cheesy Cauliflower Casserole from this site. But this recipe was pretty decent and everyone ate it.

Slow Cooker Barbecue Ribs

These turned out really well. I followed the recipe pretty much to a T. I used Bennett's chili sauce and a different cut of pork-boneless, but they got so tender and my 6 year old daughter had at least three helpings and everyone else came back for more as well. Next time I might add some onions and garlic, maybe a little mustard but overall was a very good recipe. Made lots of sauce so I am shredding the rest to have shredded pork sandwiches today. Thanks for the recipe!

Balsamic Glazed Carrots

These were pretty decent. I am not a huge fan of cooked carrots so I am still looking for the perfect recipe I can make that will help me enjoy them more, but every one in my family gobbled these up. I might use a little less brown sugar next time. I just used some whole carrots that I had leftover, sliced, instead of baby carrots. I also steamed my carrots before sauteeing them.

Nany's Cheesy Cauliflower Casserole

My family really liked this recipe-even the baby had two helpings! I used light mayonaisse, homemade bread crumbs-didn't measure just sprinkled some on top and then dotted with just 2 tablespoons of butter to create a healthier version. It was still very yummy. I did add salt and pepper once it was on my plate so next time I would probably add that to the sauce-but we will definitely make this again! Thanks for the recipe!

Apple Dumplings with Rich Cinnamon Sauce

These were so yummy! I made them last night for my small group and one of my friends who is a health-obsessed dr. actually ate one and was licking his plate by the time he was done, lol! I did make a few changes: Okay-here are the things I changed for the recipe-I doubled it to make 16 servings (8 apples), I used the big ones you buy in bulk but if you bought the smaller ones I think you could probably use a whole apple for this-I used granny smith. Also, I cut them in half horizontally then cored then and stuffed the filling inside that way-it was really easy and I didn't have to cut anything off the bottom because I just laid them on their flat sides. I put them on the crust and then I stuffed them so as not to make a huge mess trying to get them onto the crust. I doubled the filling and it used every bit so you could even do more and just pile it in the crust for more of that part-which was the best part, I thought! I made my own crust-way better in my opinion. Also we used 350-I had taken them to my friends house and wanted them to be hot so I baked them there but left the recipe at home so I wasn't sure on the temperature-I did the 425 for 10 minutes and then 350 for 20 minutes- but I thought they were done enough-I had eight of them on a pampered chef stone and 8 on a metal air bake cookie sheet. The ones on the stone turned out even better so I would probably use that again or if you used a metal dish or baking sheet, maybe reduce the cooking time. The ones on the met

Upside-Down Apple Pecan Pie

This was good-I didn't think it was too flavorful, but it was probably because I did not use the granny smith as I didn't have any on hand. I used gala which have much less "bite" to them. I will try again with the granny smith and see if I like it better. Maybe it needed more spices-who knows? I did use the wax paper trick and it came out looking beautiful-loved the topping. Great warm with vanilla ice cream or homemeade whipped cream. My family loved it and my daughter had lots of fun helping me make it. I did make my own pie crust which is a must for any pie, in my opinion. I will try again and update my review.

Amish Breakfast Casserole

This was ok-not the best I have ever had. It was a little dry and unflavorful to me. I used maple sausage and doubled the eggs. Forgot to buy cottage cheese so I didn't add that-maybe that was my problem. I might try it again with the cottage cheese-but I have a recipe for a much better casserole, IMO. I will have to post it when I find it.

Egg Noodles

These were so good and so easy. I never knew homemade noodles would be this easy or I would have been making them long ago. Won't find me buying from the store again! They did take longer than I thought they would to dry (maybe mine were fatter than they should be) but I cooked them like that anyway and they were fine. Delish!

Slow Cooker Chicken Stroganoff

My family and I loved this recipe. I am all about easy and this was just that. Next time I will double the batch and freeze some. I served this over homemade egg noodles from this site since I didn't have enough of the store bought kind and I will probably never buy noodles again. Yummy!
