Honey Baked Chicken II

I very much enjoyed this recipe. I didn't have curry powder, so I subbed in chili powder. I do think that the next time I will double the spice though. Also, I halved the butter and think I still could use less. Served with cheesy grits and asparagus, delish!

Vegan Chocolate Cake

I thought it was good, but only for 1-2 days after I baked it, then it gets dry. All the book club ladies really enjoyed it though!

Donut Muffins

I followed this recipe to a T. They're good, but nothing wowed me. they are very east to make and really make sure you don't overfill your tins. I did on a few, when I dipped them into the butter they fell apart. And they are cuter without the crown. I'll still make these again, but they're just okay.

Chocolate Chip Pumpkin Cookies

YUM! These cookies are great! I love cookies and these are a little more cakey, but still so good. The only thing I did different is use butter. I would use more spice next time, but these are great as is. Even my kids like them! *Update* The second time I made these I used all shortening and they were much better! Crispy on the outside, light and fluffy on the inside. I also used 2 tea pumpkin pie spice and think I could've used a little more. One last thing, last time I used mini choc chips, this time regular. I'd stick with the mini. Better chocolate distribution.

Heavenly White Cake

This cake is phenomenal! Light and fluffy, and so tasty. I did use the suggestions from others, used 1 1/2 cups milk and folded the egg whites in rather than beat them in. I made cupcakes and in a convection oven, they only took 15 minutes, there were 24 and enough for a thin 8 inch cake. Fantastic! This recipe is a keeper forever!

White Mountain Cake

I tried this recipe because of the rave reviews. Thought it'd be a sure thing. I followed the recipe exactly and got a cake that smelled wonderful. however, the taste was boring and it had a odd consistency. I could taste and feel uncooked flour. I'm not a novice baker, I'd say intermediate, but this recipe just didn't come out great for me.

Bread Pudding II

I am not a bread pudding fan, but this was fantastic. I used one less egg than the recipe called for and a little more bread (I used leftover french bread), just so there wasn't any liquid in the bottom. I also put a few pats of butter on top and sprinkled with sugar. Delish!

Cream of Coconut Cake

Delicious cake! Made this for my husband's birthday. It's so moist. I can't rate the frosting though (didn't have the time), I chose to use 2 cans of store bought vanilla and I added the rest of the coconut cream, coconut extract, almond extract and flake coconut. That came out delicious. Just the right amount of coconut. I also chose to bake 2 8-inch cakes and then cut them in half (to have 4 rounds). More space for frosting!

Soft Chocolate Chip Cookies II

This recipe is so good! They are soft and chewy, they remind me of Keebler Soft Batch. All my neighbors loved them. Definitely a keeper. Just one thing I'll try next time is to use butter flavored shortening to get more buttery flavor. Otherwise awesome!

Chocolate Chip Banana Bread II

Truly awesome! It is a very moist bread and can take a little longer than the 50-70 minutes to bake. Made it a second time and made into muffins, bake for only 25 minutes. Super delicious! Big hit with my family.

Roasted Chicken with Risotto and Caramelized Onions

I thought this recipe was great! I didn't put chicken into the risotto, I served it as a side dish with a balsamic marinated steak, and I only used about 5 cups of stock. It was super easy! And tasted delicious. I will be making this again.
