Banana Banana Bread

Reviewed: Feb. 24, 2009
5 star recipe for great flavor and easy to make..... NOT the best banana bread I've ever eaten (& I DO LOVE ME SOME BANANA BREAD)but a very tasty recipe for being so simple. Have made both as a loaf and as mini-muffins... prefer the mini-muffins dues to taking less time to cook and being more portable for the family to eat and grab on-the-go. Thanks for a super easy and super tasty recipe.

Honey Baked Chicken II

Reviewed: Feb. 22, 2009
Would give this 4.5 star if possible - used the other reviewers advice and halved the amount of butter. Also mixed both dijon and spicy brown mustard (most reviewers used one or the other instead of prepared mustard).... another modification from other reviewers was to increase the amount of curry and add seasoning/garlic salt. Overall a great recipe with a surprisingly unique and tasty combination of ingredients. With the changes, easily a 5+ star recipe!

Lemon Sugar Tea Cookies

Reviewed: Feb. 22, 2009
WOW! Super easy and SUPER DELICIOUS!! My husband is crazy for lemony sweets and LOVES LOVES this recipe (ate almost the whole batch himself!). Followed the recipe as written except for adding about three times the amount (3tsp) of lemon extract (based on previous reviewers suggesting so for more lemon flavor) - still think I could have added even more (for hubby's lemon fetish *winks*). Still a 5-star recipe no matter what! Thanks a bunch for submitting.

Gina's Pound Cake

Reviewed: Feb. 18, 2009
A very moist and delicious cake - - - though personally would prefer a stronger flavor. Next time I will TRIPLE the amount of lemon and maybe even add some rind and real juice..... otherwise AWESOME - rich and tasty!!

Broccoli with Garlic Butter and Cashews

Reviewed: Feb. 17, 2009
VERY VERY good - steamed my broccoli - but made sauce exactly as written. Hubby thought the sauce was overpowering and "nothing miraculous" (his words - LOL) compared to other recipes I've made. No complaints from anybody otherwise - should have made more because everybody wanted seconds. Will likely make again and try this sauce with other veggies!

Pineapple Macadamia Nut Bread

Reviewed: Feb. 14, 2009
I know pineapple and macadamia nuts are a good combo & I was looking for a recipe to use both of them. Despite the poor previous reviews of this recipe, I (over-confidently) thought I would be able to use the criticism constructively to better the recipe. I made the following changes - used a 20oz can of crushed undrained pineapple, used only 3 eggs, reduced amount of baking powder to 2 tsp, added 1.5 tsp of baking soda, and added about 1 tsp vanilla extract. Reading that other reviewers had issues with the baking time and "undone-ness" of the bread, I opted to put the batter into a 9" glass cake pan. I thought that the pan being less high would help even out the cooking (versus a loaf pan being a much THICKER volume to bake through). ANYWAY.... the cake itself needed a little extra baking time (I ended up covering with foil to prevent a burnt top) and the flavor of the bread was SO BLAND. I was expecting more pineapple flavor, especially after adding more pineapple (& its juice). Sadly, won't be making this recipe again.

Zucchini Pasta II

Reviewed: Feb. 9, 2009
Had to make a couple of modifications to make this a 5-star - is a decent recipe as written but seems to be lacking the following adjustments (to my taste of course) - started by dicing TWO chicken breasts and browning in EVOO (seasoned with a little garlic powder, italian seasoning and seasoning salt). Resumed following the recipe, but added about twice as much zucchini and three times as much roasted red pepper. Ended up using whole wheat rotini pasta and tossing the entire meal together before serving. TURNED OUT GREAT - was delicious, packed with veggies, and still creamy good with the cream cheese. (Before adding the cooked pasta could see that the sauce was a little on the runny side - adding the pasta & grated cheese helped this.)

Kettle Corn

Reviewed: Jan. 30, 2009
GREAT and easy recipe - wouldn't say it tastes as good as the fair fare ( ;) )but really, REALLY liked it!! Especially liked one reviewers tip of putting a few kernels in to see when the oil is ready. Just to note - I used Orville Reddenbacher popcorn kernels and a followed the recipe exactly - felt the oil & sugar amounts were a little too much - have since made the recipe cutting back on the oil and sugar - IS PERFECT THIS WAY - super recipe! Thanks!

This was a huge hit at a family get together - did make a couple of slight changes from others' recommendations - added a little extra lemon to get a stronger lemon flavor. Will definitely become a regular dessert in our house - thanks so much for a great recipe!!

Basil Shrimp

Reviewed: Sep. 7, 2008
I've made this recipe several times now and each time has turned out AWESOME!! First few times I followed the recipe to the tee, then started improvising with a variety of substitutions - have used juice from fresh limes instead of lemons, have both decreased and omitted mustard, have used dijon instead of brown mustard, have broiled in oven, grilled on the BBQ, etc - this is a fun recipe to play around with depending on your tastes. ALWAYS, ALWAYS, ALWAYS a hit with family, at parties, wherever. Thanks for a wonderful way to use my basil and for a fun & tasty shrimp recipe!!
