Butternut Squash Bake

OMG! This turned out fantastic! What a great mix of flavors! I can't help tweek recipes to make them healthier (in my opinion). I used much less olive oil, no additional salt and less bread crumbs and added hot pepper, pine nuts and arugula...for me a perfect main dish! I did stir 3/4 through the baking and got more uniformed crunchy brownness.

Yogurt Chocolate Chip Cookies

Great idea. Always looking for a healthier version of all recipes. I used room temp 1/4 coconut oil instead of the butter/shortening and added 1/4 c applesauce. I also used greek yogurt and added crushed walnuts. Hubby loved them! this one is a keeper!

Kale Puttanesca

I was looking for a recipe to use red kale and found this. My son and I were doing the cooking and wanted to do something with less salt, so we improvised. We used mushrooms and black and green olives instead of the capers, onions and anchovies with two large cans of crushed tomato and sprouted grain pasta. It was amazing!

Blueberry Spinach Salad

Since I am trying to cut out all forms of processed sugar, I cut up 3 dates, softened them in 3 T of boiling water and used an immersion blender. I also added garlic and used olive oil and balsamic vinegar. It came out great and plenty sweet.

Quick and Easy Brownies

I try to make all my recipes as healthy as possible (but still be good). I followed other reviews and used 1 C of flour and also used 1/2 C smart spread and 1/2 C organic applesauce and 3/4 C organic sugar. It was still more cakey than chewy, but good and chocolaty and not too much guilt! Will try again but will likely experiment again with it.

Baked Salmon with Coconut Crust

This is just delicious and different!After reading the other reviews, I marinaded the salmon in lime juice and organic pina colada juice (I did it for 45 minutes, but next time, I would soak it longer in the pina colada juice and add the lime juice sometime after that because it did get dry and lime has a tendency to "cook" the fish). I also added dark sesame oil and crushed red pepper to the marinade.
