Best meatloaf recipe ever - I've made soooooo many recipes trying to find the perfect one. This it it, hands down. I make it as written and it's amazing.

Clark's Quiche

My go-to quiche recipe because I like the ratio of egg to meat to half-and-half. I've tweaked it with more meat, less cheese, more veg and it still comes out great. Highly recommend.

Baked Potato Casserole

I get nothing but rave reviews and recipe requests when I serve this...the only reason I gave it 4 stars is that 8 cups of cheese is a bit excessive. Other than reducing the cheese to about 4 cups I make it as written and it's delicious.

Doug's Easy Applesauce

Normally I don't change recipes on here since I like to make them as written and THEN tweak if necessary...BUT I didn't have apple cider. So other than using apple juice in place of cider and leaving out the sugar entirely, I made this as written using Gala apples. FAN-FREAKIN-TASTIC applesauce. I also made a plain batch w/o cinnamon but with the apple/lemon juice and it's just as good. Great recipe - you won't be disappointed.

Baked Teriyaki Chicken

Good basic recipe - it was a little heavy on the salt and ginger for my taste. I will use less ginger, lite soy sauce and some sesame seeds next time. Other than that the chicken was tender, tasty and made a great lunch the next day. I did use boneless/skinless chicken breasts because I don't like dark meat and cooked for less time. Hubby and kids liked it as well.

Crispy Fish Fillets

Fantastic recipe! I used pollock fillets, floured them before dipping in the egg mixture and only added salt and pepper to the potato flakes as seasoning...they were unbelievably light, crispy and super tasty. Highly recommend this recipe!

Oatmeal Chip Cookies

Perfect oatmeal cookies! The only change I made was using cherry chips because I had a bag that I needed to get rid of...omg, they turned out fantastic! Moist, chewy, oaty and amazing. Tons of compliments. Thanks for a great recipe!

Fan-freaking-tastic recipe! Made as written and the only change I'd make for me personally is probably a tad less celery seed, just because it's a fairly strong flavor. Other than that it's delicious!

Sweet Pumpkin Seeds

Fabulous recipe...they came out perfect. I used parchment paper, so every time they needed to be mixed with sugar it was easy to pick up the paper and slide the seeds into the bowl. I spread them out as best I could every time and after the last 10 minute bake I didn't think they were quite roasted enough so they went back in for another 5. I did use 3 cups of pumpkin seeds because that's what I had on hand, which may be why I needed a little more cooking time. Anyway they're delicious...roasty, toasty, crunchy and cinnamony!

Catfish Cakes

I was looking for a recipe to adapt using spoonbill (paddlefish) and this is the recipe I used. The fish cakes turned out beautifully! I sauteed the spoonbill for a few minutes in a skillet until done and then shredded it to use in the fish cakes. My only complaint is that using an entire onion is overkill, IMO - they were VERY oniony - but with everything else they still were delicious. Luckily everyone I made dinner for loves onions! I'll definitely make these again (thanks to my F-I-L I have a freezer full of spoonbill). Thanks for a great recipe!

Cherry Tomato Salad

A VERY tasty and appetizing salad - beautiful presentation! After reading other reviews I used a bit less EVOO, about 1/3 cup, and substituted basil since I was out of oregano. I tossed everything and let it sit in the fridge about an hour before serving. I also ended up topping it with crumbled feta cheese and the end result was fantastic! Highly recommend!

Dill Pickles

These are awesome. The secret is the salt-vinegar-water ratio and this recipe is absolutely perfect and WAY better than any store-bought pickle. And you can experiment with pickling spices, garlic, adding hot peppers, etc. Thanks for the recipe - it's the best one I've found!
