Brown Sugar Cookies

Marinated Mushrooms II

We made these for a New Year's Eve party and brought them in a mini crock pot to stay warm. They were a hit! At the grocery store we didn't see the "small" size fresh mushrooms called for in the recipe, and bought regular-sized mushrooms. The vinegar and oil, when put into a saucepan, didn't seem like enough to cover the mushrooms, so we doubled the marinade. This recipe is delicious! We will make this again... today in fact, for a New Year's Day luncheon.

Egg Salad Sandwiches

Delicious, with a comfort food quality that we love. The dill and dried mustard are wonderful additions. We use 1/4 cup finely diced onions instead of the dried onion flakes.

Mom's Zucchini Bread

This recipe is a keeper. Delicious, easy, and the house smelled great while it baked. Changes: *Did not use walnuts. *Used just 2 cups of sugar (1 cup white granulated, 1 cup brown). *Used 3 cups of zucchini and did not drain it.

Old Fashioned Onion Rings

Delicious! This recipe was a big hit at our Super Bowl party. I didn't have "1 large onion", but I had a bag of yellow onions that were medium-sized. I used 2 of those onions and there was just enough batter. I cut them slightly thicker than 1/4 inch. We served them with Ken's Steak House Honey Mustard Dressing. The breading stayed on the onions, and was crunchy and delicious. This recipe is a keeper!

The Best Rolled Sugar Cookies

The dough was easy to make and to work with, and the results were tasty and consistent. I made these for a party and due to winter weather, many people couldn't attend. I kept the leftover cookies in a foil-covered tray, and more than a week later they weren't dried out at all, but still delicious.

Delicious Black Bean Burritos

Five stars for this one! It's easy and delicious, and we'll definitely make this again. Satisfying to both vegetarians (me) and omnivores (hubby). The only change that we made was to warm 4 tortillas instead of 2, making 2 smaller burritos for each of us.

Apple Cranberry Relish

Everyone loved this with their holiday turkey. People asked for seconds and thirds (never saw anyone do that for cranberry sauce from a can). As others suggested, we prepared this a day in advance. Leaving it in the fridge overnight gave the sugar granules time to break down and blend in. We tasted the relish just after preparing it, and the sugar was gritty between our teeth. The next day it was perfect. This recipe yielded much more than was needed, so I've been stirring a little into my plain yogurt each morning.

We used two 14.5 ounce cans of great northern beans, rinsed well. We added the beans after the other ingredients had a chance to simmer. People are right about the olive oil; it may sound like a lot but use the full amount. This soup was easy to make, and looked and smelled great while it cooked - we couldn't wait to eat it! It was delicious, and was a hit at the family post-holiday potluck. Everyone wanted to try the "vegetarian soup", and there were no leftovers to bring home. We'll be making another batch within the week so that we can have more for ourselves.

French Toast II

My husband usually is the one to make French toast at our house, but when I made this for breakfast he declared it the best he'd ever tasted. I halved the recipe but made no other adjustments.

Homemade Black Bean Veggie Burgers

As others suggested, I dried off the rinsed beans to keep the burgers from falling apart. For a more complex flavor, I halved the chili powder and cumin, and added black pepper and McCormick Montreal Steak Seasoning. Veggie burgers can seem dry on a hamburger bun, even with cheese and condiments, because there's no fat content from beef to moisten the sandwich. After trying one of these patties on a hamburger bun with cheese and mayonnaise, the next night I made a kind of patty melt: I warmed the patty (which had been in the fridge) a bit in the microwave. Then I formed it to be flatter and more square. I placed it between two pieces of bread (buttered on the outsides) along with a slice of cheese, sauteed onions, and a bit of mayo. I grilled it up in a frying pan long enough to heat it through, to melt the cheese, and to brown the bread. It was very tasty, and I will be making this recipe again with my variations.

Chocolate Chip Pancakes

We tried this recipe for the first time about 6 weeks ago, and my husband wants to make these pancakes every Sunday. They're easy to make, delicious, and thick n' fluffy. If you leave out the chocolate chips, you still get great pancakes. You won't want to go back to just-add-water pancakes after eating these. We haven't yet tried the Cinnamon Honey Syrup because we keep forgetting to buy more honey.

Lentils and Rice with Fried Onions (Mujadarrah)

Yum, so delicious! This is an instant classic in our house. Talk about comfort food - I'm ready for a nap. And there are plenty of leftovers too. As others suggested, I used 2 onions instead of 1, added a pinch of salt and sugar to them as they cooked, and caramelized them really well. Probably the only thing I'll do different next time is add 1 more onion.
