Quick and Easy Green Chile Chicken Enchilada Casserole

Reviewed: Apr. 26, 2011
Yummy! My hubby and I really enjoyed this. I halved the recipe. First, I cooked the chicken on the stove with the garlic salt & TSP of EVOO. I mixed my diced chicken with the sour cream and added 1 tsp of taco seasoning to the mixture. Layered 1 small can of enchilada sauce on bottom, followed by torn tortillas, then chicken mixture, then cheese in 8X8 dish. Covered and baked 45 minutes. Served w/ Spanish rice.

Yummy! I normally use the round pretzel rings (purchase from Meijer) and drizzle with white chocolate (melt white chocolate chips w/ a little crisco, dip fork into chocolate and drizzle onto pretzels). Thanks for sharing. :-)

Easy Garlic Broiled Chicken

Reviewed: Sep. 19, 2010
Very tender and moist! Instead of broiling it, I baked it at 375 for about 45 minutes, turning every 15 minutes. Also, we used chicken tenders. Our four year old says it's his favorite chicken!

Golden Sweet Cornbread

Reviewed: Sep. 19, 2010
Excellent! I poured the batter into muffin tins lined with cupcake/muffin papers. This recipe works great as muffins. I pour the batter almost to the very top of the paper liners (makes 12 muffins) then I bake this at 375 degrees. It takes about 20 minutes for a toothpick to come out clean. The tops are always nicely browned and the muffins are perfectly cooked.

Easy Iced Coffee

Reviewed: Mar. 27, 2010
Yummy! I emptied out a baby jar to shake 2 tsp Swiss White Chocolate (general foods international brand), 1 packet Splenda and 3 TBS of warm water. After I poured milk in my glass I added 1 TBS Sugar Free Caramel Coffee Syrup (Archer Farms brand from Target). Also, I used frozen coffee cubes so it's not watered down. No more spending $$ at Starbucks this summer!! Thanks for sharing!

Baked French Toast

Reviewed: Mar. 26, 2010
Yummy! I halved the recipe for my fam of four. Used only 3 eggs, a little less than 3/4 cups of milk and 1/2 cup of cream. I turned bread over after a couple of hours in the fridge. Baked in oven the next morning for 30 minutes, then turned bread over again and baked for another 15 minutes.
