Strawberry Cake from Scratch

This was probably the best strawberry cake I have ever had. I did not tweak the recipe and it turned out fine (as written, you should sift the flour before measuring). For the folks who had issues with the cake falling: Do not overbeat while mixing. I used a wooden spoon to mix this one and the texture was perfect! Served with Rick's Special Buttercream Icing, with fresh sliced strawberries between the layers. This is a keeper.

Red Velvet Cake

So it turns out that I don't really like red velvet cake. That being said, the people to whom I fed this cake that do like red velvet cake thought it was divine! Followed the recipe for the cake and the frosting exactly. Did not have any trouble at all with the frosting separating or being grainy. I will use this recipe again for sure! (SIL has a birthday coming up...)

Fluffy White Frosting

Super frosting! After reading all of the reviews that said the frosting didn't fluff up, I actually think I may have overbeaten it a little bit. However, it was still wonderful! I followed the recipe exactly and didn't encounter any problems at all. Perfect compliment to a dark chocolate cake!

Simple White Cake

This cake was ok, but it is not a white cake. It's a yellow cake. I make it twice. The first time, it was missing something and I couldn't figure out what it was. Two tsp of vanilla ought to be plenty for a small cake like this. Then I made it again the next day (for the second layer) and realized that there is no salt in the recipe. I added a scant 1/2 tsp and it was much better, but still a little bland. Per other reviews, I added a little more milk than called for, and it was moist enough and pretty dense, which was what I was after. As a general rule, when creaming butter and sugar, I add them to the mixer, turn it on and leave it while I grease and flour my pans. Usually, that gives the sugar and butter plenty of time to get nice and fluffy.

Dark Chocolate Cake I

I made this cake just as written and it was super yummy! Didn't have any trouble with sticking; just greased and floured the pans. The cake came out very moist, very dense and very rich. I used the Rich Chocolate Frosting from this site and it was very good, but I think it will be even better with a vanilla frosting. Will try that next time.

Lime Pear Gelatin Salad

This was pretty good. I added a little mint extract for some extra kick. I think next time I will add a little more;-) but good over all. Very quick and easy, too.

Cake Balls

These were just ok. I used strawberry cake and french vanilla icing. I tasted the "batter" after I mixed the cake and the icing together, and it was fantastic. After chilling and dipping in chocolate, they weren't so good anymore. Not even my 4-year old liked them. Due to all the good reviews, I will still include them in my cookie gift bags for Christmas. Hopefully other people will like them more than I did.

These are great! Due to my son's peanut allergy, I substituted Sunbutter (made from sunflower seeds) for the peanut butter, and it worked fine.
