Good Old Fashioned Pancakes

I used 1 cup of whole wheat flour and 1/2 cup of white flour, and added wild Maine blueberries. My son and husband agreed: they are the best pancakes they ever ate!

Curried Tofu Salad

Wonderful salad. Baking the tofu first helps it hold together. I cut the tofu into 3/4 inch cubes and it worked out well. This is the only tofu recipe I have that even non-vegetarians rave about. I often get asked for the recipe.

Cream of Jerusalem Artichoke Soup

Wow, my family loved this soup. I made it less rich by using 2 tbs butter instead of 1/4 cup and whole milk instead of cream. I used vegetable broth, and dry sherry instead of brandy. I also added 2 garlic cloves as suggested. We found it to be creamy, hearty and filling with a slightly smokey flavor from the sunchokes.
