Picnic Marinated Summer Slaw

I made this late for Recipe Group. It was good, but a little too sweet for me. I didn't fill the 1/2 cup sugar all the way to the top, and I still thought it was a bit sweet. The cucumbers are really what makes this slaw good. I chopped my own cabbage, and I probably had about 16 oz. My tomato was small, so I added some red bell pepper for color.

Cheddar Bacon Hamburgers with Horseradish

Made for Recipe Group. This burger had a nice flavor. I normally just make plain hamburgers, so this was tasty and different. It would have been excellent if I hadn't overcooked it. I was ready to take them off, but got distracted, and by the time I got them, they were a little overdone and a lot of the cheese had melted out. That was my fault though.

Strawberry Oatmeal Breakfast Smoothie

This is a tasty and filling smoothie. I will try oatmeal in more of my smoothies. It does have a different consistency, but I liked it. I left out the sugar because I used 1/2 c ice cream and 1/2 c milk. I forgot the vanilla, but I'll try it next time. Very yummy. Thanks for such a great idea. Oh, and my 19 month old liked it too!

Easy Baked Chicken Thighs

This is one of those recipes that you can change up how you want, but the basic recipe method is great. I used legs and thighs. I didn't measure the spices, just sprinkled liberally over both sides and added paprika, black pepper and kosher salt. I drizzled just half a tablespoon of butter over the top. I served it with couscous and was able to spoon some of the pan drippings over it. I also served it with "Fresh Corn and Zucchini Saute" from this site. Very nice meal.

Best Ever Kabob Marinade

Made this for Recipe Group. I will use this recipe again; it had a nice flavor. I used chicken breasts that I salt/peppered and sliced in half. I was only able to marinate for maybe 20 min, but the meat was still flavorful. I used sriracha for the chili sauce, which gave it a nice kick. I realized after we were eating them that I forgot to add the oil to the marinade, but the chicken still came out tender. I know this would have been even better if I had added the oil and marinated for the correct amount of time. Thanks for the recipe Lindsay Clark!

Taco Bell® Seasoning Copycat

I used this for taco meat tonight, and it was very good. It was just a little too salty, so I'll cut back just a bit next time. I'm out of white sugar, so had to use brown sugar. And I only put a sprinkle of cayenne and then a sprinkle of black pepper so it wouldn't be too spicy for my son. My son gave it a thumbs up.

Caldo Gallega

I thought this turned out very well. I only had ham, so I added extra. I'm sure the sausage would have added more flavor to the soup, so I made up for it a little by adding some black pepper, garlic salt and a bay leaf. The other change I did was to hand mash some of the potatoes in the soup to make it a bit thicker, as my husband doesn't like lots of broth. Nice, yummy soup. Thank you Pam.

Banana Sour Cream Bread

I got very frustrated making this bread, and I thought I'd never make it again. However, once it came out of the oven, the bread is so good--moist and just sweet enough. I'll have to make it again! However, my very large mixing bowl almost overflowed--I wondered if my bananas were too large. I had so much batter! I used four 6X2 loaf pans and then figured I would put the extra batter in 6 muffins. I ended up filling 18 muffins and not having room in my oven for all of them. I started cooking them at 300 degrees, but I began to question the temp and so checked the reviews and decided to turn it up to 325. The loaves took 1 hr, while the muffins took 30 min at 325. Next time, I will make 2 large loafs instead. :)

Sriracha Cheese Bread

This was very good! I was tempted to add oil, but I didn't. The bread is SO soft; you don't need any. This rose very high for me--almost too high. It didn't need a whole hour to rise, but that may be due to how warm it is in the house right now. Even though it rose high, it didn't lose it's shape at all. DH loves hot and spicy, and he said he didn't feel the heat in it at all, but he still liked the cheesy taste. I could definitely feel the heat, but it wasn't overpowering. I toasted a slice and had it with my egg for breakfast the next morning.

Loga's Microwave Chicken

This was really good for chicken from a microwave! I've had this recipe in my box for years and finally made it; I'll be making chicken like this again. It's a bit messy to eat (micros don't make crispy chicken), but it tastes great. I used 1 T less curry powder and didn't measure the cayenne, just shook some in. Mine took 15 min- I checked at every five and turned them over and spooned sauce on all the legs. Next time I'll serve this with rice because the sauce was very yummy.

Chipotle Beef Tostadas

I made this for Recipe Group. I really liked this and plan to make it again. I was afraid the sauce would make it too spicy, so I took some of the meat out for my son before adding the sauce. However, I didn't think it was very spicy after cooking and think DS would have been fine with it. My hubby wasn't too excited about the potatoes in it, but I thought they were great. We added our favorite taco toppings on top too, and that made it even better.

Pizza Crust for the Bread Machine II

This was just as the author stated--crispy on the outside and tender on the inside. I didn't think it was chewy or tough, and the dough was so easy to work with. I've never made crust before, and this turned out better than I hoped--it was perfect! My family thought it was the best pizza they ever had and said I should open a pizza shop. I'll never tell them how easy it was! ;) I followed the recipe exactly. I did add another 1/4 c water as the dough ball was forming in the machine as it was too dry. If you've not worked with yeast before, make sure your yeast is fresh and that your water is not cold; the water should be room temp (slightly warm--not hot). This made a 14 inch round for me, and I could have gotten it to 16 inch for a thinner crust.

Simple Pina Colada Muffins

These were very good. They turned out very moist and not overly sweet. I used over ripe bananas. These looked so nice; I liked the way the coconut toasted a bit on top. I used pineapple tidbits instead of chunks, and I think crushed pineapple would work nicely also, just drain really well. I didn't have rum extract, so I used real rum, but I couldn't taste it in the finished prouduct. I need to buy some rum extract and try these again sometime. I got this from Recipe Group but made it a couple weeks late.

Better Than Sex Cake II

This cake is SO good! I call it "Candy Bar Cake" because I took it to work all the time, and I didn't want to use this name. (I worked with all men.) Also, they preferred Snicker's bars over Heath. I've made a Reece's Cup one using peanut butter topping instead of caramel. And I made an Oreo cookie one and used chocolate fudge topping. This cake has so many possibilities. Personally, I prefer the original toffee bars.

Italian Style Beef Sandwiches

This turned out very good. I had all the water/spices already in the crock pot when I realized I only had a 2.5 lb roast. It came out great--lots of flavor, a little too much water, but it was fine. Some reviews say it came out bland, so maybe use a smaller roast or double the other ingredients. I cooked it for 10 hours, and it was so tender.

Slow Cooker Pulled Pork

This was an OK way to cook a 4 lb pork loin that I wanted to cook without turning on the oven or any fuss. I didn't think the root beer added any real flavor. I thought it was a bit dry, but with the BBQ sauce on it, the sandwiches were fine. I kept some of the meat out before adding BBQ sauce and made quesadillas the next night. I added chili powder, onion powder and cumin to the meat, and they turned out great.

Butterscotch Fruit Salad

I've been making this salad for years and have tried it with crushed pineapple and tidbits; I like the texture of the tidbits better. Also, I exchange the peanuts with cut up Snickers bars. Fold the Snickers in last or your chocolate will get stirred up too much. Bananas taste good in this too.

Easy Italian Pasta Salad

I didn't have green, so I used a red and yellow bell pepper. I'm not a fan of the celery in this. I like the cucumber though. I added some green peas. I used Bruschetta Italian Vinaigrette by Wishbone. For leftovers I wanted to make this a meal, so I added pepperoni, chunked cheese, onions and carrots, then spruced it up with more dressing and we had dinner.
