My favorite things to cook
I love baking bread, both by hand and in the bread machine. I like quick homemade dinners or slow cooker recipes. One of my favorite comfort foods is rice pudding.
My favorite family cooking traditions
My immediate family always has pitch-ins for birthdays and on holidays. We all like to cook, and we always make too much and eat too much, but it's always a lot of fun. We all have our specialties (like my cheesy potatoes) that we're required to bring, but it's fun to try out new recipes and mix it up sometimes.

Summer Squash Bread
This bread turned out very well. I did make a few changes, which I think helped with the flavor. I only used 1 1/2 c sugar because I added a brown sugar and cinnamon topping. I added an extra tsp of vanilla. I only used 1/4 t nutmeg, due to personal preference. Also, I added golden raisins and walnuts. It was very yummy and DH and DD loved it. When I make this again, I will add some salt and will probably use 3 tsp cinnamon and 1 tsp nutmeg. I used an 8X4 bread pan and 2 mini loaf pans. The mini loafs were done at 50 min and the 8X4 loaf was done at 60 min. Overall, a nice basic quick bread recipe.

Zucchini Crisp
Nice recipe, but if you're using a huge zucchini, I suggest cutting the seeds out! This turned out OK when I followed the recipe, but after one bite it didn't taste like apples to me at all. I felt like the lemon juice needed to be increased as it's what really makes it have that "apple" taste. The spices and topping were right on though. The main problem was I used a large garden zucchini (like the recipe submitter described), and they can have some softer middles with larger seeds. The seeds were a bit of a turn off for me. I tried it again and cut out the soft middle with the seeds, sliced the pieces thinly this time, and increased the lemon juice by an overflowing tablespoon. I still knew it wasn't apples, but it was more enjoyable for me this way. It was good, especially with some Cool Whip on it, and I'll probably make it again next year with my changes.

Cucumber Tomato Salad with Zucchini and Black Olives in Lemon Balsamic Vinaigrette
This was a fantastic salad. I didn't have fresh basil or thyme so used about 1/2 tsp of each dried. I added a few splashes more of balsamic, because we like it. The dressing is so good! I ate this as a side with my BLT. I knew DH was getting home late and would be eating this as a main course, so added some mozzarella cheese chunks and some shrimp. He was still talking about the salad this morning and can't wait for more tonight. :) Thanks for a real keeper!!
