Loaded Vegetarian Quiche

Made as directed for lunch aboard my ship and was very popular, and very attractive. Will definitely do again. Had to use mixed cheddar/Monterey cheese as that is what I had.

Sweet and Sour Pork Tenderloin

Sorry, I found this to have way too much vinegar taste. I would almost halve the amount. I also had to add cornstarch/water to thicken it slightly. I did like the step for caramelizing the pineapple. Very tasty. I also added green peppers and onions to round out the dish.

Mexican Rice III

This rice dish is Fabulous as written! I do add a little Tumeric to the chicken broth to give the dish a nice yellow colouring, though.

Fettuccine with Sweet Pepper-Cayenne Sauce

I just served this for lunch for my ship's crew of 22 and it outsold my very popular "beef fajitas". I took note of the issue of this being watery, so I added 2tbsp. of flour directly into each c. of sour cream before adding. Thickens it up nicely.

Classic Macaroni Salad

This recipe is perfect, as is, with NO CHANGES! It has been a hit at every meal that I've served it at, and I have been asked for directions on how to make it numerous times. I have substituted fuscilli macaroni, but that makes no difference to the taste.

Southern Candied Sweet Potatoes

These were a huge hit at my Easter dinner last night I did do as others suggested, and substituted 1c. brown sugar for 1 c. of the white. Very easy to do in my caste iron fry pan, and truly delicious!

Roasted Pork Loin

As a ship's cook, the only changes I made was that I used a 16 lb. pork tenderloin roast, and tripled the recipe. The flavours really come through, it was delicious.
