Cream of Herb Soup

Reviewed: Aug. 21, 2008
I made this for a dinner party and everyone really liked it. The only issue I had was I changed the servings to 6 for 6 people and there wasn't enough to make full bowls for everyone. I would plan on more servings.

Raspberry Cup Cakes

Reviewed: Aug. 21, 2008
This dessert was so easy and so delicious! I made it for a party and everyone loved it. I doubled the amount of raspberry puree to put on top.

Red Garlic Mashed Potatoes

Reviewed: Aug. 21, 2008
I did not like these potatoes. I left out the sugar like some of the other reviews suggested, but I thought they just tasted like butter and needed something else. If I made them again I would reduce the amount of butter and add onions, salt and more steak seasoning. I made them for a dinner party and others agreed.

Cheddar Garlic Biscuits

Reviewed: Aug. 21, 2008
These were so good and so easy! They were such a hit with my dinner party. I quadrupled the cheese and dipped them in the margarine/garlic powder as other reviews had suggested. The only problem was they were smaller than I thought and everyone loved them. If I made them again I would make 3 per person!

Scallops Mascarpone

Reviewed: Aug. 21, 2008
I thought this dish was only ok. I made it for a dinner party and was a little disappointed. I love scallops and the vegetables were great, but I thought putting a sauce over the scallops kind of ruined them, and overall the dish was bland.

Slow Cooker Pineapple Pork Roast

Reviewed: Sep. 5, 2008
I used pork tenderloin because I had some I needed to use up, poked holes in the pork before cooking, and added 1/2 cup teriyaki sauce and half an onion, like some of the other recipes had suggested. The flavor was very good and everyone loved it. It was a little dry for my taste because I usually like a lot of sauce; next time I might add more pineapple juice to cover the roast. Overall good.

Pumpkin Risotto

Reviewed: Oct. 24, 2008
This was good. I changed a few of the ingredients to save money (took out the onions, used more garlic instead; used Italian Seasoning rather than thyme or sage) and used chicken stock rather than the cubes like a previous review had suggested. It was really good, but I ate it by itself and it probably would have been better along with something else, like chicken.

Roast Pumpkin and Feta Risotto

Reviewed: Feb. 19, 2010
I loved the end result of this, but I altered the recipe a lot. I used butternut squash instead of pumpkin because it was in season, 6 cans of veg and chicken broth like some of the reviews had suggested, a whole clove of garlic, and 10 oz of goat cheese instead of 6 feta because I prefer it. I added a package of shredded parmesan cheese, chicken, and crushed basil. I did not bake the cheese before adding, or peel the squash. I mashed half of it before adding like the directions said, but I wish I wouldn't have because with the squash being so tender, it just fell apart anyways and I didn't get any good chunks or color. I had a few days worth of leftovers and loved eating this every time!

Antipasto Squares

Reviewed: Feb. 19, 2010
I made the big mistake of making this for some picky eaters without any of the meat, but not adding anything else since they don't like vegetables either. Made that way the recipe was very bland, but I could tell that it would have been really good if I had made it the way it was written. I added a lot of crushed red pepper and oregano. I think it would be good with a variety of cheeses.

Cranberry Puffs

Reviewed: Feb. 19, 2010
These turned out so well. Everyone asked me for the recipe. I made them without the jalapeno (due to the people eating it, I would have loved that.) I also put all of the mixture in, rather than saving some for dipping, and used phyllo dough instead of wonton wrappers since I couldn't find them. I baked them like some of the other reviews suggested. Overall, these were delicious and I can't wait to make them again!

Pear and Prosciutto Pizza

This was amazing. I used wheat crust, and did not alter the recipe at all. I could seriously eat this everyday, it was so good and easy!

Brooklyn Girl's Penne Arrabiata

Reviewed: Feb. 19, 2010
I make this all the time and love it!! Such a good recipe. I make it with wheat pasta and leave out the chicken and bread crumbs. I like adding whatever else I have around...garbanzo beans and black olives are some favorites!

Classic Tuna Noodle Casserole

Reviewed: May 11, 2010
I'm going to have to try this recipe again. I made some changes and it really turned out badly. I used wheat egg noodles and tried cooking them a long time because they usually have a firmer taste, but I overcooked them and made the whole dish taste like a soggy mush. We ended up throwing out the leftovers. Judging from the other reviews though I will have to try again as written...

Aunt Eileen's Stuffed Eggplant

Reviewed: May 11, 2010
I'm not sure what happened with this one...I made the recipe as written but the eggplant was really hard and we had to just scoop the filling out and eat it by itself. I'm a beginner cook so not sure if the eggplant just wasn't ripe enough? We ended up throwing this out though.

Marinated Tuna Steak

Reviewed: May 13, 2010
This was AMAZING!!!! So easy and sooo delicious. It looked really nice too, I definitely want to make this for company sometime!! I made a few changes based on what I had, but nothing that different...used sesame ginger marinade instead of soy, canola oil instead of olive, left out the parsley and did more oregano, marinated for about 40 min, and cooked 5 min on each side on the grill. So good!!! Served with green beans in soy sauce and sliced almonds and it was perfect.

Apple Cheese Pizza

Reviewed: May 14, 2010
My fiancee really liked this but I followed some other suggestions and changed the recipe, so that is why I am not giving it a better rating. I used a wheat crust, put minced garlic on the cream cheese before adding the cheese, used a bag and a quarter of cheese (about 2 1/2 cups), and then putting green onions and chopped turkey bacon on the top. I used an 8 oz package of cream cheese to make it easy to spread and that was WAY too much. The pizza was really good but it was too rich with all of the cream cheese I put. Next time will make it with about half, closer to the recipe amount. Did really like the overall taste though and will make again.

Slider-Style Mini Burgers

Reviewed: Dec. 3, 2010
Oh my gosh this recipe is SO good!!!! I'm never going to White Castle again. I made it with ground turkey, fat free mayo and fat free cheese. I followed others' suggestions and baked them wrapped in the foil (not on a cookie sheet.) Ours came out a little crispy so next time I will probably only bake for 10 minutes so it can melt together (since everything in it is alreay cooked.) We used sandwich rolls though so it might be different with the regular buns.

Parmesan Spinach Balls

Reviewed: Dec. 3, 2010
These didn't blow me away, but it was a good appetizer to bring to a party since it's not a common one. I served them with marinara and everyone really liked them. They did take a bit of work, but the end result was good. I added 2 tsps minced garlic per others suggestions, garlic powder and a little oregano, and used yellow onion instead of green since it was what I had. They definitely took more like 35 minutes to bake like some of the other reviews said.

Cheesy Potatoes II

Reviewed: Dec. 3, 2010
Nice, easy recipe. I used fat free soup, cheese, and sour cream, and didn't add the butter per some of the other reviews, and I added garlic, garlic powder, and a touch of oregano. Mine was not nearly as good as others I've had, but it was due to the low fat ingredients so I'm still giving the recipe a good rating. Next time I want to try with the potatoes O'Brien!

Chicken in Savory Lemon Sauce

Reviewed: Jan. 12, 2011
This was good, but I had thought the sauce would be thicker for some reason. Mine was like sitting in a soup. I baked it all together for an hour at 325 like one of the reviews suggested. Definitely still good, but would try leaving out the water next time. I also squeezed a whole fresh lemon per the reviews.
