Easy Yet Romantic Filet Mignon

Super easy and delicious. Used onion instead of shallot based on some reviews. Did not need any sauce, was very flavorful on it's own. I did add a bit of garlic salt too.

Roasted Brussels Sprouts

Love love love this recipe! So easy and fast, and the results were delicious. I was worried they would be bland but they weren't at all with the browning. Will be making this a lot moving forward!

Tender Italian Baked Chicken

So easy and delicious. Made with panko instead of bread crumbs and Light Miracle whip instead of mayo, but otherwise followed the recipe. Flipped over halfway through like some of the reviews had suggested. Mine took a little bit longer..25-30 minutes. Next time will dry the Dijonnaise like some reviews suggest!

Slow-Cooker Chicken Tortilla Soup

Made this last night and absolutely loved it. Only change I made was subbing another can of chicken broth for the water per other reviews. Mine was quite spicy! I was worried since I read another review that talked about it being bland...hubby and I were both sweating with runny noses! I will probably halve the green chiles next time I make it. Could also have been the enchilada sauce...my grocery store only had Medium so that was what I used. Overall really good though and will definitely make it again!

Yellow Squash Casserole

My husband liked this a lot. I liked it and will definitely make it again at some point, but wouldn't say it's the "best." The texture was good and I added nutmeg and oregano per another review. I like the idea of adding bacon and will probably try that next time, and cut the squash into smaller pieces. Overall easy and good.

Tasty 2-Step Chicken Bake

Love this recipe, but it took me almost twice as long. The chicken was raw after 25 minutes; it took about 50 for me. Great garnished with parsley. I've seen other recipes that add a little chive and onion cream cheese if you want a richer sauce. (I although I think it tastes plenty rich without too.)

A lot of oats. I tried adding more vanilla and still only taste the oats. Would probably reduce those and add more vanilla next time!

Jennie's Heavenly Slow Cooker Chicken

Delicious. I made it with cream of mushroom soup instead of golden like some of the reviews suggested, cooked on high for four hours, and served over egg noodles. So good and easy!

Pasta Peas

I thought this was ok. It was good, but I've definitely had better versions of it in restaurants. Mine was a little bland and soupy. I used chicken broth instead of water and added fresh garlic, oregano, Italian seasoning, and fresh parsley per some of the reviews. I also doubled the cheese to use mine up. We still ended up adding crushed red pepper and garlic bread to give it more flavor. I think diced tomatoes, ground sausage, and basil could be good additions.

Cranberry Dip

Mine didn't turn out well, but I'm giving this one more star since I think it would be better if I had followed the directions. I doubled the recipe for a party and spread it in a pan, but it was too thin and no one could get any on their pretzels, so it remained pretty much untouched. If I had kept it as a block, I think more people would have eaten it.

Blueberry Cream Muffins

These were good, not exceptional though. I used whole wheat flour and no vanilla since I was out of it, and added cinnamon per some other reviews. They were good, but not a ton of taste.

Brunch Omelet Torte

This was SO good! I used turkey sausage instead of the bacon. I didn't do the egg baste on top because I forgot. I used an 8 inch pie pan and ran out of room so left out one of the layers of potatoes and used it as an additional side. Otherwise followed exactly and it was awesome!

Chicken in Savory Lemon Sauce

This was good, but I had thought the sauce would be thicker for some reason. Mine was like sitting in a soup. I baked it all together for an hour at 325 like one of the reviews suggested. Definitely still good, but would try leaving out the water next time. I also squeezed a whole fresh lemon per the reviews.

Cheesy Potatoes II

Nice, easy recipe. I used fat free soup, cheese, and sour cream, and didn't add the butter per some of the other reviews, and I added garlic, garlic powder, and a touch of oregano. Mine was not nearly as good as others I've had, but it was due to the low fat ingredients so I'm still giving the recipe a good rating. Next time I want to try with the potatoes O'Brien!

Parmesan Spinach Balls

These didn't blow me away, but it was a good appetizer to bring to a party since it's not a common one. I served them with marinara and everyone really liked them. They did take a bit of work, but the end result was good. I added 2 tsps minced garlic per others suggestions, garlic powder and a little oregano, and used yellow onion instead of green since it was what I had. They definitely took more like 35 minutes to bake like some of the other reviews said.

Slider-Style Mini Burgers

Oh my gosh this recipe is SO good!!!! I'm never going to White Castle again. I made it with ground turkey, fat free mayo and fat free cheese. I followed others' suggestions and baked them wrapped in the foil (not on a cookie sheet.) Ours came out a little crispy so next time I will probably only bake for 10 minutes so it can melt together (since everything in it is alreay cooked.) We used sandwich rolls though so it might be different with the regular buns.

Apple Cheese Pizza

My fiancee really liked this but I followed some other suggestions and changed the recipe, so that is why I am not giving it a better rating. I used a wheat crust, put minced garlic on the cream cheese before adding the cheese, used a bag and a quarter of cheese (about 2 1/2 cups), and then putting green onions and chopped turkey bacon on the top. I used an 8 oz package of cream cheese to make it easy to spread and that was WAY too much. The pizza was really good but it was too rich with all of the cream cheese I put. Next time will make it with about half, closer to the recipe amount. Did really like the overall taste though and will make again.

Marinated Tuna Steak

This was AMAZING!!!! So easy and sooo delicious. It looked really nice too, I definitely want to make this for company sometime!! I made a few changes based on what I had, but nothing that different...used sesame ginger marinade instead of soy, canola oil instead of olive, left out the parsley and did more oregano, marinated for about 40 min, and cooked 5 min on each side on the grill. So good!!! Served with green beans in soy sauce and sliced almonds and it was perfect.

Aunt Eileen's Stuffed Eggplant

I'm not sure what happened with this one...I made the recipe as written but the eggplant was really hard and we had to just scoop the filling out and eat it by itself. I'm a beginner cook so not sure if the eggplant just wasn't ripe enough? We ended up throwing this out though.
