Meatball Nirvana

Making these for dinner tonight. OMG! NOM NOM NOM!!!! I had to get out of the kitchen before I ate them all. Got them simmering right now in some Newman's Own "Sockarooni" sauce. I substituted the milk for one egg. This will be my meatball recipe forevermore!

Bow Tie Pasta with Sausage and Sweet Peppers

This recipe was a good base in which to put my own spin on things, like I always do. I used a Johnsonville Beef Sausage. Red, Green and Yellow Peppers, Onions, and Fresh Mushrooms. I used Tri-Color Rigatoni. Couple pinches of salt and pepper. Tbsp of garlic powder. Mixed everything together and let sit over low heat for about 30 minutes. Top with some grated parm cheese. Eat it up! Nom-nom-nom!

White Chili with Ground Turkey

Tried this tonight for something different. Like nearly all the recipes I find here, I fine tune it to my liking. Instead of turkey, I used 1lb of ground chicken. I used 4 cups of chicken broth, reserving 1/2 cup to add 2 tbsp corn starch and make a roux to add later to thicken it up a bit. 5 cups of broth will definitely make this, "soup." I didn't include chilis or add the jack cheese, but otherwise used the recipe as it stood. I thought it was delicious! Definitely a departure from my traditional "red" chili that I make. Which is exactly why my wife didn't care for this recipe. I would have given it 5 stars if she had liked it better. She said it was okay, but liked the "red" chili better. Definitely give this a try if you want a break from "red" chili, beef stew or chicken noodle soup on a cool evening.

Chunky Potato Soup

I tried this one out several weeks ago. very delicious, warm, comfort food. I didn't add any cheese. I felt that cheese of any kind would ruin it. I guess you could put cheese on the side and let people add it if they want. My only alteration to this recipe was to use half & half in place of milk and I added more veggies! I'm making this tonight!!!

Kyle's Favorite Beef Stew

I had never made homemade beef stew before and I was wanting to try it out before the upcoming cold months. I didn't follow this recipe to the letter, but it was very much my base. I didn't use wine or mushrooms and I halved the recipe. It was very delicious. I'll never buy a can of beef stew again. This was too easy and too delicious! I'll be making it again for Thaksgiving weekend when we've had all that we can stand of turkey!

Ultimate Twice Baked Potatoes

Very awesome!!! Very filling! This is a main course, not a side! I substitute ham for the bacon. I go easy on the onions, half the butter and I add a heaping tablespoon of cream cheese to the mix. So delicious! Here's a tip on baking the potatoes, after washing and drying them, rub them in an oil of your choosing. The skins will be excellent!

My Chili

This was my first attempt at making homemade chili. I used this recipe as a guideline and made a couple of changes. First of all, I did not add the salt specified in the recipe. Another reviewer said it was too salty and I'm sure they were right. It was plenty salty enough with all of the other ingredients. I added a 6 oz. can of tomato paste. Additionally, I added a 15 oz. can of spicy chili beans. I used 2 TBS of garlic powder and 1 TBS of unsweetened cocoa, I saw it in another recipe, I had some here, so I threw it in! I had adjusted the servings to 4 instead of the 8 that was originally on the recipe. It was very delicious! I couldn't stop taste testing it! I will be making this again if it ever gets cold again here in Florida!

Sausage Spanish Rice

I prepared this dish exactly as the recipe specified. It was absolutely awesome! I am a stay at home house hubby, so I do all of the cooking. My wife went back for seconds of this dish. She never goes back for seconds. Great dish. Leftovers can be wrapped in a flour tortilla with cheddar cheese. Awesome!
